Amish Courtship Potatoes

Today’s recipe is my Instant Pot twist on Courtship Potatoes on Amish 365. The author writes, “This is an interesting recipe sent to me from an Amish woman in Wisconsin. Not sure why they are called ‘courtship potatoes’, other than she referenced that this was a favorite recipe to make for her future husband while they were dating. The recipe must have worked since they are now married:)” I legitimately could not stop eating these potatoes. MMMMM! They were addicting. And maybe they’re not the healthiest but they make a good side dish alongside some roasted vegetables and chicken breast.

Ingredients/Substitution Ideas

  • Russet potatoes–or red, yukon gold
  • Butter
  • Milk
  • Cheddar Monterey jack blend–or all cheddar works
  • Sour cream
  • Kosher salt
  • Black pepper
  • Green onions

Steps

Add 1 ½ cups of water to Instant Pot. Add in a trivet. Wash potatoes and place them on the trivet. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up you can release pressure immediately or wait until you’re ready to serve the potatoes.

Remove the lid. Remove potatoes and trivet and discard the water. 

Turn Instant Pot to sauté setting. Add in the butter and let it melt. Add in the milk. Stir in the cheese and let it melt. Stir in the sour cream, salt, pepper and green onions. 

Turn off heat. Grate the potatoes into the sauce and fold in. 

Serve immediately.

Notes/Tips

  • Serve as a side dish to ham, turkey, chicken. This is a great way to mix things up in place of mashed or baked potatoes.
  • You can swap the sour cream for plain Greek yogurt if you want a little more protein and tang.
  • Add some crispy bacon crumbles for a loaded-potato vibe!
  • If you prefer a smoother texture, peel the potatoes before cooking. If you’re like me and love that rustic texture, leave the skins on.
  • This recipe can easily be doubled (or tripled). Double ingredients, keep the same cooking time.
  • This recipe is gluten free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • I used a trivet that came with my Instant Pot. But if you don’t have one you can easily find one on amazon*.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 3 large Russet potatoes

  • 1/2 cup milk
  • 1 cup shredded cheddar Monterey jack blend
  • 1/2 cup sour cream
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 green onions, sliced
