Instant Pot French Onion Salisbury Steaks–caramelized onion gravy drizzled over the top of a cheese covered hamburger Salisbury steak patty. This tastes amazing served over mashed potatoes or egg noodles.

Instant Pot French Onion Salisbury Steaks
This is a cross between the flavors of French onion soup and Salisbury steak. With a gravy made of caramelized onions, some melty provolone cheese and a well seasoned burger patty you have all the makings of a delicious dinner.
Ingredients
For the patties:
- Lean ground beef–85/15 works well because it isn’t greasy but has enough fat for flavor
- Worcestershire sauce–for flavor
- Panko bread crumbs–you can also use regular bread crumbs or crushed saltine crackers
- Garlic powder, Italian seasoning, kosher salt, black pepper–for flavor
- 4 slices of provolone cheese–you can also use another type of cheese
For the gravy:
- Butter–to slightly sauté the onions
- Yellow onions–they shrink down a lot
- Baking soda–it raises the PH of the onions which also assists in speeding up the Maillard reaction (the browning process of onions that gives it that sweet, golden flavor).
- Water
- 1 Tbsp Better than Bouillon Beef Base–for savory gravy flavor
- Worcestershire sauce–for flavor
- Cornstarch–for thickening the gravy. You can also use arrowroot or flour to thicken.
Instructions
- Make the patties: add ground beef, 2 tsp Worcestershire sauce, panko, garlic powder, Italian seasoning, kosher salt and pepper to a mixing bowl. Use clean hands to combine well (I like using kitchen gloves*). Divide equally into 4 balls. Flatten into patties and set aside.
- Start to caramelize the onions: turn Instant Pot to sauté setting. Add in the butter and let it melt. Add in the sliced onions and baking soda. Toss well. When onions start to yellow and put off a little moisture pour in the water, bouillon and 1 Tbsp Worcestershire. Turn off Instant Pot.
- Pressure cook: Add the patties on top of the onions. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid and move patties to a plate.
- Thicken the gravy: Make a cornstarch slurry by stirring together cornstarch and water until smooth. Turn Instant Pot to sauté setting. Stir in the slurry until gravy thickens. Salt and pepper the gravy to taste.
- Melt the cheese: Place patties back into the pot and top each patty with a slice of cheese. Turn Instant Pot to the keep warm setting. Place the lid of top and let the cheese melt for a couple minutes.
- Serve: Serve the patties on top of mashed potatoes or egg noodles and top with gravy.
Notes/Tips
- You can use another type of cheese like swiss, gruyere, parmesan, mozzarella, etc.
- This recipe makes a lot of gravy and you could easily halve the amount of gravy. Or you can double (or 1.5 times) the patty ingredients. If you make more than 4 patties you’ll have to slightly overlap them to make them all fit.
- Serve the patties and gravy over homemade mashed potatoes or egg noodles. Other choices are cauliflower rice, rice, buttered toast, etc.
- If you don’t have Better than Bouillon you can use another type of beef base or bouillon cube. Each brand has a different amount of potency so experiment with how much to use.
- I used my 6 quart Instant Pot but you can also make this in an 8 quart pot.

I just made this tonight. However, as much as I would like to give it 5 stars, it definitely did not have enough flavor. I had to add lots of other spices to make it tasty. I would like to make it again but I’m stymied on how to make the gravy more flavorful. Any suggestions?

When you cook onions they give off moisture. You can tell just by watching them as you stir. Once that happens, pour in the water, etc.
