Forgiveness Casserole
Today’s recipe is adapted from Osheta Moore. She states, “One of the reasons I’m chronicling my breakfasts this month is I want to get in the habit of each breakfast. Most days it’s ok, I graze throughout the morning, but on Sundays I’m cranky and antisocial at church because I’m so incredibly hungry. So, last night I prepped this yummy casserole that’s the easiest and most forgiving recipe for a breakfast casserole. Seriously. You can’t mess it up. It’s one of those clean slate dishes that you can make a zillion different ways, throw in whatever veggies you have on had, use any breakfast meat, use an interesting combination of veggies and cheeses. Whatever. It’s flexible and forgiving. Sort of how I want to be. Enjoy my friends and I hope you try out this flexible, fluffy, fantastic, forgiving breakfast casserole.” I found this recipe to be incredibly easy and flavorful. Like she said, try adding in veggies (sauteed mushrooms, peppers and onions would be a good option). You can also try sausage crumbles or ham cubes instead of bacon crumbles. It’s really adaptable! Ingredients/Substitution Ideas
- Eggs
- Bacon crumbles–or ham cubes
- Bread–french bread is a good option
- Milk–or half and half, evaporated milk
- Kosher salt
- Black pepper
- Onion powder
- Garlic powder
- Dry ground mustard
- Hot sauce–optional
- Cheddar cheese–I like sharp
Steps
Heat oven to 350° F. In a mixing bowl add the eggs and whisk. Stir in the remaining ingredients (except the cheddar). Stir in half of the cheese.

Spray a 8×8 or 9×9 inch baking pan with non-stick cooking spray. Add the egg mixture into the pan.

Bake for 40 minutes. Sprinkle remaining cheese on top and bake for 5 more minutes.
Let sit for 5 minutes before slicing and serving.

Notes/Tips
- Serve with orange juice or some fresh fruit like sliced strawberries.
- You can prepare this the night before. Add ingredients into pan and cover with foil. Refrigerate overnight, remove foil and bake in the morning after letting it come to room temperature.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 3 slices of bread, cut into small cubes (french bread is a good option)
- 1 cup milk
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp dry ground mustard
- 1 Tbsp hot sauce
- 1/2 cup shredded cheddar cheese
Instructions
Oven Instructions:

- Spray slow cooker with non-stick cooking spray. Add the egg mixture into the crock.
- Cover and cook on high for 2-3 hours. Sprinkle remaining cheese on top and bake for 5 more minutes, until it melts.
- Let sit for 5 minutes before slicing and serving.
Notes
You can prepare this the night before. Add ingredients into pan and cover with foil. Refrigerate overnight, remove foil and bake in the morning after letting it come to room temperature.

I make a Savory Bread Pudding almost same as your casserole but use more bread, milk and eggs. Also sometimes add fresh spinach or use ham or sausage or different cheese, also add nutmeg like in a sweet bread pudding. it’s a great way to clear out the fridge. Probably could use you ingredients measures and just make smaller. Being a widow it’s too much for just me so I slice and freeze most of it, makes a great breakfast when I don’t want to cook!
