I’m Awake Casserole

You’ll be pumped to wake up in the morning if this is what you get to eat for breakfast! This breakfast casserole is fast and easy to prep with no sauteing or chopping steps. You can easily serve this for dinner also. We love our breakfast-for-dinner nights! Feel free to add in diced peppers, sliced mushrooms, sauteed onions, spinach or diced tomatoes.

Ingredients/Substitution Ideas

  • Hash brown patties–I used McCain’s quick cooking hash brown patties
  • Ham cubes–you can also use sausage crumbles
  • Cheddar cheese–I like sharp. You can also use another type of cheese like colby jack.
  • 4 eggs
  • Milk–or evaporated milk, half and half
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Ground mustard

Steps

Preheat oven to 350° F. Spray a 9×9 inch pan with non-stick cooking spray.

Line the bottom of the pan with the hashbrowns.

Evenly spread the ham and cheese over the top.

In a bowl whisk together the eggs, milk, salt, pepper, garlic powder and ground mustard. Pour the egg mixture over the top.

Bake for 40 minutes. Slice and serve. We like topping ours with a bit of salsa, ketchup or hot sauce.

Notes/Tips

  • Serve with orange juice, fresh berries and toast.
  • This recipe can be gluten free if you use gluten free hash browns.
  • Try topping each serving with a bit of salsa, ketchup or hot sauce.
  • The hash brown patties don’t need to be thawed.
  • You can also use tater tots in the place of hash brown patties. Just line the bottom of the pan in one layer with tots.
  • Double this recipe and bake in a 9×13 inch pan.
  • Glass baking dishes will take a longer cooking time by 5-10 minutes.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

  • 8 ounces ham cubes
  • 1 cup shredded cheddar cheese
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp ground mustard

    Can shredded hash brown potatoes be used in place of hash brown patties or tater tots sub? I’m not a fan of the texture for either kind of frozen potatoes. Thank you.

    really really good! I used a 9-in square baking dish but still had to cut my hash browns to fit. really good flavor.

    Made breakfast for dinner and this was perfect. Savoury, filling and delicious. I needed to cook a little longer than the 40 minutes but was so tasty!
