Six Shooter Casserole
This breakfast casserole is one of those lifesaver recipes you’ll want to have on hand! It’s packed with all the good stuff like hashbrowns, ham, bacon, and green chiles. It’s the kind of thing you throw together the night before (or even in the morning…it’s comes together very quickly), pop in the oven in the morning, and boom breakfast is ready. It feeds a crowd and reheats well as leftovers for the next few days. It’s perfect for weekends, holidays, or anytime you’ve got hungry people to feed and don’t feel like standing over a stove. Ingredients/Substitution Ideas
- Shredded frozen hashbrowns–or the frozen potato cubes will work
- Bacon crumbles–or browned sausage crumbles
- Ham cubes
- Diced green chiles–or salsa verde
- Eggs
- Milk–or cream
- Kosher salt
- Black pepper
- Ground mustard
- Cheddar cheese–or pepper jack
Steps
Heat oven to 350° F. Spray a 9×13 inch pan with non-stick cooking spray. Add hashbrowns into the pan. Layer the bacon, ham and green chiles on top.

In a bowl whisk together the eggs, milk, salt, pepper and ground mustard.

Pour over the top of the hashbrowns. Sprinkle the cheese on top.

Bake for 1 hour. Let sit for 5 minutes. Slice and serve. Top with salsa or hot sauce, if desire

Notes/Tips
- Serve with fresh fruit like strawberries and some OJ.
- Try adding in some sauteed veggies like mushrooms, peppers and onions.
- Try adding half of the cheese at the beginning of the cooking time and then adding the other half 5 minutes before the end of the cooking time to get a baked on cheese and melty cheese mix.
- I love using my little whisk* to beat eggs.
