Southern Hamburger Onion Gravy Casserole–an easy dinner made with seasoned ground beef, corn and a savory onion gravy served over creamy homemade mashed potatoes, all cooked in one pot!

Southern Hamburger Onion Gravy Casserole
This is just good old-fashioned home cooking! We made this meat and potatoes dinner on Sunday when Reagan and Hayden came over, and all four of us loved it. The fun part is that the beef and gravy cook in the same pot as the potatoes. It only takes a handful of ingredients that you probably already have on hand. The onion soup mix is the secret ingredient that gives the gravy so much flavor. You can also swap out the corn for peas or mixed vegetables, depending on what you have in your freezer.
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion
- Water–or low-sodium beef stock
- Dry onion soup mix–I used Lipton onion soup mix
- Red potatoes–or Yukon Gold potatoes
- Butter
- Milk–or half-and-half
- Salt and pepper
- Frozen corn–or frozen peas or mixed vegetables
- Cornstarch
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease.

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. Sprinkle the onion soup mix on top of the beef, don’t stir.

Add potato cubes into a steamer basket and drop the basket into the Instant Pot on top of the meat.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid.

Dump the potatoes out of the steamer basket into a bowl. Mash the potatoes. Stir in the butter, milk and salt and pepper to taste.

Stir the corn into the beef mixture.

Make a cornstarch slurry by stirring the cornstarch together with 2 Tbsp of cold water until smooth. Turn Instant Pot to saute setting. Stir the slurry into the pot to thicken the gravy.

To serve scoop mashed potatoes on a plate and top with a ladleful of the beef and onion gravy.

Notes/Tips
- Serve with roasted broccoli and dinner rolls.
- No need to peel the potatoes if you use red or yellow potatoes!
- If the gravy is too thick, add a splash of water or beef broth.
- Frozen peas, carrots or mixed vegetables would work great in place of the corn.
