An easy Instant Pot dinner made with tender chicken, wide noodles, bacon, ranch seasoning, spinach and a creamy parmesan sauce.

The Crazy Amazingly Good Casserole
These creamy noodles were such a hit! We had Reagan and Hayden over for Sunday dinner and then a couple more young adult friends came by so they joined us. We all decided dinner was a win! The cream cheese makes the sauce rich and decadent, and the ranch mix and bacon add so much flavor. I loved how the noodles soaked up all that creamy, cheesy goodness and how easy it was to throw everything together in the Instant Pot. The pot was scraped clean and there were no leftovers.
Ingredients/Substitution Ideas
- Chicken broth–or Better Than Bouillon and water
- Old fashioned wide egg noodles–they are wider, more homemade looking, typically in a clear stand up bag
- Boneless skinless chicken thighs–or chicken breasts or rotisserie chicken
- Dry ranch dressing mix–use the dry seasoning, not bottled dressing. I like Hidden Valley brand.
- Cream of chicken and herbs soup–or regular cream of chicken soup, cream of mushroom
- Cream cheese
- Bacon crumbles–or freshly cooked and crumbled bacon
- Parmesan cheese–freshly grated or pre-shredded
- Chopped spinach–or baby kale
Steps
Add broth and noodles into Instant Pot.
Cut the chicken thighs into bite size pieces (you can also use 3 cups of rotisserie chicken).
Add the chicken over the noodles. Sprinkle the chicken with ranch mix. Spoon the cream of chicken on top. Place the cream cheese on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Gently stir. Stir in the bacon, parmesan and spinach.

Serve and enjoy!

Notes/Tips
- Serve with roasted broccoli, steamed green beans or a salad.
- To stretch this meal further use 4 cups of broth and 16 oz of noodles.
- You can substitute about 3 cups of cooked, shredded rotisserie chicken. Since the chicken is already cooked, you can stir it in after pressure cooking instead of cooking it with the noodles.
- Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.
- Other recipes you can make with ranch dressing mix are Instant Pot Bacon Ranch Chicken and Instant Pot Crack Chicken Soup.
- Tools:
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Kitchen shears* (I used these to cut the chicken)
- Cutting board*
- Magnetic measuring cups*
- Magnetic measuring spoons*
- Glass measuring cup*
