Buttery Beef and Potatoes–a hearty Instant Pot (or slow cooker) beef dish with ground beef, potatoes, carrots and garlic flavored with onion soup mix and cooked under pressure in just 3 minutes.

Buttery Beef and Potatoes

This easy one pot meal was simple but delicious. It hit the spot for a Sunday dinner. With just a little prep and using ingredients you probably already have on hand you can enjoy this cozy dinner tonight. The whole garlic cloves become mild and I loved mashing in them into my potatoes for a garlic potato mash.

Ingredients/Substitution Ideas

  • Lean Ground Beef–I used 93/7. You can also use ground turkey.
  • Diced Onion
  • Water
  • Carrots
  • Potatoes–I used Russet potatoes
  • Garlic Cloves–I buy a big bag of peeled garlic from Sam’s or Costco and then freeze it.
  • Lipton’s Onion Soup Mix
  • Fresh Cracked Pepper
  • Butter

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Scatter the carrots, potatoes and garlic cloves into the pot. Sprinkle the onion soup mix over the top. Do a few cracks of pepper over the top. Add in the butter.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid. 

Gently stir. Serve and enjoy!

Notes/Tips

  • Serve with roasted green beans or a green salad.
  • Add a splash of Worcestershire or soy sauce for extra umami.
  • For a richer flavor, sauté a tablespoon of tomato paste with the beef.
  • This recipe can be gluten free if you use gluten free onion soup mix.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

A hearty Instant Pot (or slow cooker) beef dish with ground beef, potatoes, carrots and garlic flavored with onion soup mix and cooked under pressure in just 3 minutes.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1 small onion, diced
  • 1/2 cup water
  • 3 carrots, peeled and cut into 1 inch pieces
  • 3 medium potatoes (about 16 oz), peeled and cut into 1 inch cubes
  • 10 garlic cloves, peeled
  • 1 packet Lipton’s onion soup mix
  • Fresh cracked pepper
  • 2 Tbsp butter, cut into 8 pieces

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Transfer to the slow cooker.
  2. Stir in the water, carrots, potatoes, garlic cloves and onion soup mix. Do a few cracks of pepper over the top. Scatter in the butter.
  3. Cover and cook on low for 3-4 hours, or until potatoes are tender.
  4. Gently stir. 
  5. Serve and enjoy!

    Really good! I was feeling under the weather but still needed to feed my son and husband….found this, only three minutes pressure time, quick release. Karen 365 to the rescue again and it tastes great.

      By the way, you can cut two tablespoons of butter into eight pieces each if the butter is cold, but my butter was soft so I just dotted the hamburger mixture with butter, stirred after done.

    Why does the recipe say 2 Tbsp butter cut CUT INTO 8 PIECES?? That’s not possible.

      why not? cut 2 tablespoons as 1 chunk. then cut it in 1/2….1 Tbs each. cut it like you are making 4 perfect little squares …..Poof! 8 pieces.
