Description

An easy dinner made with seasoned ground beef, corn and a savory onion gravy served over creamy homemade mashed potatoes, all cooked in one pot!

Ingredients

Scale
  • 16 oz lean ground beef
  • 1 cup diced onion
  • 1 1/2 cups water
  • 1 packet dry onion soup mix
  • 2 pounds red potatoes, cut into cubes
  • 3 Tbsp butter
  • 1/2 cup milk
  • Salt and pepper
  • 1 cup frozen corn
  • 2 Tbsp cornstarch

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease.
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. Sprinkle the onion soup mix on top of the beef, don’t stir.
  3. Add potato cubes into a steamer basket and drop the basket into the Instant Pot on top of the meat.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid.
  5. Dump the potatoes out of the steamer basket into a bowl. Mash the potatoes. Stir in the butter, milk and salt and pepper to taste.
  6. Stir the corn into the beef mixture.
  7. Make a cornstarch slurry by stirring the cornstarch together with 2 Tbsp of cold water until smooth. Turn Instant Pot to saute setting. Stir the slurry into the pot to thicken the gravy.
  8. To serve scoop mashed potatoes on a plate and top with a ladleful of the beef and onion gravy.
