BBQ-glazed meatloaf slices served with a baked potato topped with sour cream and a fresh side salad with lettuce, shredded carrots, and cherry tomatoes on a white plate.

Lipton Meatloaf

This easy meatloaf is so flavorful thanks to the onion soup mix and the barbecue sauce. If you have fresh beef on hand it comes together quickly…just mix everything in one bowl, shape it and bake. You can make it with 2 pounds of beef or mix it up with 1 pound of beef and 1 pound of pork. We loved this dinner with baked potatoes that I made in the Instant Pot and a simple green salad. Enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef–or 1 pound lean ground beef and 1 pound ground pork
  • Lipton Onion Soup Mix
  • Eggs
  • Breadcrumbs
  • Milk
  • BBQ sauce–or ketchup
  • Worcestershire sauce
  • Onions–or shallot
  • Ground black pepper

Steps

Heat oven to 350° F. Spray a pan with non-stick spray or line with parchment. Add all ingredient into a mixing bowl. Use clean hands to mix well to combine (don’t overmix). Form the meat into a loaf about 9 inches long and 3 inches tall.

Bake for 45 minutes. Check temperature of the middle of the meatloaf, it should be at least 160° F. If desired, brush some extra barbecue sauce over the top of the meatloaf. Tent with foil. Let sit for 10 minutes. Slice and serve

Notes/Tips

  • Serve with baked potatoes and green salad.
  • Let it rest before slicing so it holds together better.
  • For extra flavor, brush BBQ sauce on top during the last 10 minutes of baking.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze this. Wrap the fully cooked (and cooled) meatloaf tightly and freeze for up to 3 months You can also freeze it uncooked. Just shape it, wrap well, and thaw in the fridge before baking.
  • Other recipes you can make with bread crumbs are Daddy’s Comfort Casserole and Instant Pot Duck Dynasty Casserole.

I’ve substituted oat meal for the bread crumbs and it worked well

This recipe sounds amazing! Can it be made with ground turkey instead? And can a loaf pan be used? Thanks!

Yes and yes! Ground turkey works great. Just keep in mind it’s a little leaner, so it may be slightly less juicy. And a loaf pan is totally fine to use!
