Poor Dude Husband Casserole
This is the kind of meal that proves you don’t have to spend a lot of money to put a satisfying dinner on the table. Potatoes are one of the most affordable ingredients at the grocery store, Costco rotisserie chicken is the best deal at just $5, and a bag of frozen mixed vegetables can often be found for around a buck. And even though it’s inexpensive it’s really tasty…the combination of garlic, butter, salt, pepper, and parmesan cheese flavors everything perfectly. The whole meal comes together in about 20 minutes, making it perfect for those nights when you’re hungry right now and don’t have the patience to wait for a longer-cooking dinner! Enjoy!
Ingredients/Substitution Ideas
- Leftover baked potatoes–or you can make fresh them in the Instant Pot or slow cooker
- Butter–or olive oil
- Garlic–fresh minced garlic is best. I use my garlic press.*
- Frozen mixed vegetables–or any frozen vegetable blend
- Rotisserie chicken–or leftover cooked turkey
- Kosher salt
- Black pepper
- Parmesan cheese–or Pecorino Romano
Steps
Slice the baked potatoes into bite size cubes and set aside.

Heat a pan over medium high heat. Add in the butter and let it melt. Add in the garlic and sauté for 30 seconds. Stir in the frozen veggies and cook through. Stir in the chicken, potatoes, salt and pepper and heat through.




Stir in the parmesan cheese and let it melt. Remove from the heat.

Serve and enjoy!

Notes/Tips
- This was a one pan meal for me but you can bulk up the meal with a dinner roll, fruit or a side salad.
- This is a great way to use up leftover baked potatoes from earlier in the week. I love making “baked” potatoes in the Instant Pot. If you don’t have leftover potatoes you can make them now and slice them up (they’ll be hot and a little hard to stay together). Or you can boil the raw cubes of potatoes until tender.
- Any cooked chicken works well in this recipe, including leftover grilled or baked chicken. I love using the rotisserie chickens from Costco because they are cheap ($5!) and ready to go.
- You can also use a different protein like cooked ground turkey or ground beef, smoked sausage (cut down on the salt) or leftover sliced up steak or pork chops.
- If your potatoes are very large, you may want to use only 3 potatoes to keep the ingredient ratio balanced.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze leftovers for up to 2 months, although the potatoes may soften slightly after thawing.
