Parmesan Fingerling Potatoes–air fried or oven-roasted fingerling potatoes with a crispy rosemary parmesan crust and a smooth buttery center. They are super fast and easy and may become your new favorite food!

Air Fryer Parmesan Fingerling Potatoes
I want to make these again tonight. They were that tasty! The potatoes were perfectly seasoned. Plus the crispy texture on the outside and creamy middle was a dream. I shared these with my family but now I’m wishing I wouldn’t have haha!
According to Wikipedia, “A Fingerling potato is a small, stubby, finger-shaped type of potato which may be any heritage potato cultivars. Fingerlings are varieties that naturally grow small and narrow. They are fully mature when harvested and are not to be confused with new potatoes.” I found them in a small netted bag next to the red potatoes at my grocery store. I don’t usually buy fingerling potatoes but they are quite perfectly shaped and I liked the flavor and different colors.
Ingredients/Substitution Ideas
- Fingerling potatoes–you can also use another type of potato that has been sliced into wedges
- Olive oil–or another type of oil
- Dried rosemary leaves
- Garlic powder
- Onion powder
- Italian seasoning–or you can make your own
- Kosher salt
- Black pepper
- Parmesan cheese–shredded or grated
Steps
- Coat potatoes in seasonings: Add all ingredients to a container with a lid and shake well to coat potatoes in oil and seasonings.
- Place potatoes on a rack in your air fryer. Scrape out all remaining parmesan cheese and seasonings and dump it on top of the potatoes.
- Air fry at 400° F for 15 minutes (shake the basket half way through the cooking time).
- Serve the potatoes and enjoy! We like ours dipped in Olive Garden parmesan ranch dressing.
Notes/Tips
- To bake in the oven: grease a baking sheet with 3 Tbsp of oil. Spread the seasoned potatoes in a single layer on the baking sheet. Bake at 425° F for about 20 minutes. Turn the potatoes and cook for another 15-20 minutes until the other side has browned.
- Serve parmesan fingerling potatoes as a side dish to any dinner (like hamburgers or pork chops on the grill) or as a snack.
- I used my Instant Pot brand air fryer.* I haven’t tried this in my Instant Pot with the air fryer lid but I think it would work just fine. I would use the little wire rack that came with my Instant Pot to get the potatoes closer to the heating source.
- This recipe is gluten-free.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days.

- 1 1/2 pounds fingerling potatoes, washed and cut in half lengthwise
- 1 1/2 Tbsp olive oil
- 1/2 tsp dried rosemary leaves
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Italian seasoning
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/3 cup shredded parmesan cheese
