Description

An easy leftover baked potato recipe made with rotisserie chicken, vegetables, garlic, butter and parmesan cheese for a cheap, fast and satisfying weeknight meal.


Ingredients

Scale
  • 4 medium leftover baked potatoes
  • 3 Tbsp butter
  • 6 cloves of garlic, minced
  • 1 cup mixed frozen veggies
  • 1 cup chopped rotisserie chicken
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 cup shredded parmesan cheese

Instructions

  1. Slice the baked potatoes into bite size cubes and set aside.
  2. Heat a pan over medium high heat. Add in the butter and let it melt. Add in the garlic and sauté for 30 seconds. Stir in the frozen veggies and cook through. Stir in the chicken, potatoes, salt and pepper and heat through. 
  3. Stir in the parmesan cheese and let it melt. Remove from the heat. 
  4. Serve and enjoy!
