Barb’s Casserole–a casserole version of the Kentucky hot brown sandwich. With turkey, toast, cheese sauce, bacon and tomatoes you can’t go wrong.

Barb’s Casserole
This dish is based on the Kentucky Hot Brown sandwich. If you’re not familiar, the hot brown is an open faced sandwich featuring roasted turkey, bacon, tomato and a cheesy bechamel sauce. It originates from the Brown Hotel, in Louisville, Kentucky. My daughter is currently serving a mission in Louisville so I had to try out this recipe in honor of her! It was a win! Decadent and delicious and easier to serve a crowd than individual sandwiches.
This recipe is adapted from Barb’s Hot Brown Casserole on Cuss Kitchen.
Ingredients/Substitution Ideas
- White bread
- Turkey–you can use deli turkey or leftover roasted turkey
- Butter
- Milk
- Heavy cream
- Parmesan cheese
- Swiss cheese–or white cheddar cheese
- Kosher salt
- Black pepper
- Bacon crumbles
- Roma tomato
- Paprika
Steps
Heat oven to 375° F. Toast the bread and cut into cubes. Place the cubes evenly into the bottom of a 8×8 inch pan. Top the toast with the turkey.

In a large pan over medium low heat melt the butter. Slowly whisk in the flour and whisk until it is golden in color.

Whisk in the milk, cream, ½ cup parmesan and swiss until the cheese is melted and sauce has thickened. Stir in the salt and pepper. Spread the mixture over the turkey and bread.

Sprinkle the bacon, 2 Tbsp of parmesan, tomatoes and paprika on top.

Bake for 20 minutes. Serve immediately.

Notes/Tips
- Serve for brunch or dinner. This tastes great with a side of asparagus (steamed, roasted or grilled).
- You can easily double this recipe. Just bake it in a 9×13 inch pan instead of the square dish.
- This dish is best the first day. However you can store leftovers in an airtight container* in the refrigerator for up to 4 days.
