Opie’s Casserole
I adapted this recipe from Opie’s Cheesy Tater Tot Casserole on food.com. The author said, “I created this recipe over time in homage to the original from Opie’s BBQ in Spicewood, TX.” I’ve never been to Opie’s but his tater tot casserole is real indulgent and tasty! A small serving seems to go a long way. It’s pretty rich. This would make a good side dish to bring to Easter dinner. Enjoy!
Ingredients/Substitution Ideas
- Ore-Ida frozen tater tots
- Campbell’s Healthy Request cream of chicken soup–or another cream soup like cream of mushroom or cream of celery
- Sour cream
- Cheddar cheese–I like sharp
- Black pepper
- Colby jack cheese
- French fried onions
Steps
Heat oven to 350° F.
In a mixing bowl stir together the tater tots, cream of chicken, sour cream, cheddar and pepper. Spread the mixture into a 9×9 inch baking pan.

Bake for 55 minutes. Sprinkle the colby jack and french fried onions on top and bake for 5 more minutes.

Serve and enjoy!

Notes/Tips
- Serve as a side dish to ham, chicken or pork chops.
- You can make this a meal by adding in some chopped rotisserie chicken and some veggies like frozen broccoli or peas.
- Double this recipe to make a 9×13 inch pan.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Made this easy-peasy casserole today as rhe potato side dish for Easter Sunday dinner (doubled it for a crowd)…it was a dellicious huge hit, with none left!
The only change I made was because some in the family are not fans of French fried onions, so I subbed in one bunch of sliced green onions for those.
I felt the black pepper was enough seasoning as there is plenty enough salt in the soup and Tater Tots, however next time I think I would also add a generous sprinkling of garlic powder and maybe even some onon powder 😋
