Instant Pot or Crockpot Hidden Soup

Hidden Soup

This is a yummy, healthy soup that my family loved. Greg had 3 bowls! It’s a fast dump and go recipe. It’s a sneaky soup because it hides the vegetables completely. It seems like a cream based soup but there is no dairy in it. It is fairly low carb and gluten free. It also has 18 grams of protein per serving. What a perfect soup for lunches too! Enjoy!

Ingredients/Substitution Ideas

  • Water
  • Better than Bouillon chicken base–or you can use 6 cups of chicken broth
  • Celery
  • Onion
  • Carrots
  • Cauliflower
  • Garlic cloves
  • Boneless skinless chicken thighs–or chicken breasts, or a couple cups of rotisserie chicken
  • Turmeric, sage, rosemary, thyme, poultry seasoning, pepper, kosher salt, red pepper flakes

Steps

Add all ingredients into Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Remove the chicken from the pot and place on a cutting board. Shred or chop.

Pour the contents from the Instant Pot into a blender (work in batches, if needed). Blend until smooth and creamy. Pour back into Instant Pot.

Stir in the chicken. 

Ladle into bowls and serve.

Notes/Tips

  • Serve with crackers, rolls, cornbread, breadsticks or french bread.
  • This recipe is gluten free, dairy free and somewhat low-carb.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 6 cups water
  • 2 Tbsp Better than Bouillon chicken base
  • 1 rib of celery, cut into 2 inch pieces
  • 1 small onion, quartered
  • 2 carrots, peeled and cut into 2 inch pieces
  • 1 head of cauliflower, quartered
  • 6 large garlic cloves
  • 1 pound boneless skinless chicken thighs
  • 1/2 teaspoon each turmeric, sage, rosemary, thyme, poultry seasoning, pepper, kosher salt
  • Pinch of red pepper flakes

Instructions

Instant Pot Instructions:

  1. Add all ingredients into Instant Pot.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Slow Cooker Instructions:

  1. Add all ingredients into slow cooker.
  2. Cover and cook on LOW for 4-6 hours.
  3. Remove the chicken from the slow cooker and place on a cutting board. Shred or chop.
  4. Pour the contents from the slow cooker into a blender (work in batches, if needed). Blend until smooth and creamy. Make sure to vent and pause blending after a few seconds to release steam to that it doesn’t explode. Pour back into slow cooker.
  5. Stir in the chicken. 
  6. Ladle into bowls and serve. 

Notes

You can also use an immersion blender* to blend the soup. I used my Blendtec blender*.

    Followed the recipe exactly and it was extremely soupy instead of creamy. I tried to thicken it up with corn starch but that could only go so far. Good flavor though. Also I didn’t think there was enough chicken. I’d recommend one pound of beats and one pound of thighs.

    I made this soup yesterday morning. I used my crockpot. I followed the recipe exactly, except I added some cabbage I needed to use up, and I didn’t have chicken stock, so used 3 cups of vegetable stock and added powdered chicken bullion to taste. I also used 3 cups spinach water that I had in my freezer for added vitamins. The soup is fantastic! My husband is the taste tester for adding S&P, (since I am a salt fiend) and he is a better judge than me so it doesn’t end up yoo salty. He loved his tasting samples so much he kept going back for more! My immersion blender worked perfect to blend the soup. Can’t wait to eat it tonight 👍

        Thanks, I’m on it!! It is definitely soup weather here in Panama City on the gulf coast….we got 5 & a half inches of snow last night! I know that’s nothing compared to what y’all get, but this is so beautiful to me. This is only the 3rd time it’s snowed here in my lifetime so I’m loving it!

          P.S. had to have surgery on my right thumb (tendon repair, it just popped!) middle of Dec & right hand still in cast, so am having to do everything left-handed. What a pain! Thank the Lord my sweet hubby is chopping everything for me & helping me with the IP!

            You win that bet! It barely got up into the 30’s yesterday so started to melt a little on the roof…back down to 17 degrees last night so this morning beautiful again, snow still everywhere and icicles on the eaves!! So pretty. What a treat!

    This sounds wonderful and want to make it. Do not have Better than Bouillon chicken base in the house; may I just substitute 6 cups of chicken broth?
