Ole Miss Casserole

Ole Miss Casserole–an easy breakfast casserole with only 4 ingredients. A perfect recipe for when you have a 10 or 11 am kickoff!

Ole Miss Casserole

I snagged this recipe from Rebel Walk, a website dedicated to all things Ole Miss. This recipe was shared as an idea to serve for a football game that kicked off at 11 am. Although I am not an Ole Miss fan (we are buckeyes and cougars in our household) I did love this breakfast. First off it only had 4 main ingredients and it was so easy to put together and clean up. This is a solid breakfast casserole that would be great for Christmas morning. You can get fancy and add in sauteed onions, peppers and mushrooms if you’d like. I liked this casserole with a bit of salsa on top. Enjoy!

Ingredients/Substitution Ideas

  • Pillsbury crescent roll dough sheets
  • Breakfast sausage–I like Jimmy Dean
  • Eggs
  • Salt and pepper
  • Colby jack cheese–or sharp cheddar

Steps

Heat oven to 350 degrees. Spray a 9×13 inch pan with non-stick cooking spray. Unroll the dough sheet and press it into the bottom of the pan.

Brown the sausage and drain off excess grease. Sprinkle the sausage on top of the dough.

In a bowl beat the eggs and add in some salt and pepper to taste. Pour the eggs over the sausage. 

Sprinkle the cheese over the top.

Bake for 25-30 minutes until no longer jiggly. We liked this served with a bit of salsa on top.

Notes/Tips

  • Serve with blueberry muffins, milk and fresh fruit like orange slices.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days or in the freezer for up to 3 months. I wrapped individual pieces in foil for quick and easy breakfasts.
