Merry Christmas to you! I hope you have a wonderful season. If you’re looking for a delicious breakfast casserole that you can make in your Instant Pot or slow cooker I’ve got you covered. This egg dish is everything good about breakfast in one dish…it includes some form of potatoes, scrambled eggs, bacon, sausage and of course a bit of cheese.

This is a smaller scale breakfast casserole that serves 4-6 people. If you’re looking to serve a crowd you can double or triple the recipe and make it in your slow cooker. It’s perfect to put in the slow cooker while you’re opening presents.

    Description

    Eggs, bacon, sausage and tots are the stars of this indulgent and delicious breakfast casserole that’s perfect for Christmas morning or Sunday brunch. 


    Ingredients

    Scale
    • 6 large eggs
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 cup milk
    • 1/2 teaspoon thyme
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 1/2 pound frozen tater tots or hashbrowns
    • 4 frozen fully cooked sausage patties
    • 1/2 cup grated cheddar
    • 4 pieces crispy cooked bacon, broken into large pieces

    Instructions

    Instant Pot Instructions:

    1. In a mixing bowl beat together the eggs, salt, pepper, milk, thyme, onion powder and garlic powder with a whisk.
    2. In an oven safe dish that fits inside your Instant Pot (I used this one*) add the tater tots in a single layer. Then place the sausage patties on top of the tots. Pour the egg mixture over the top. Then sprinkle the cheese and bacon pieces on top.
    3. Cover the dish with foil. Pour 1 ½ cups of water into bottom of Instant Pot.  Place the dish on top of a trivet with handles. Lower the dish into the bottom of the Instant Pot. 
    4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 25 minutes. When time is up let the pot sit for 10 minutes and then move the valve to venting. 
    5. Remove the dish and the foil. Scoop onto plates and enjoy.

    Slow Cooker Instructions (can easily be doubled or tripled):

    1. In a mixing bowl beat together the eggs, salt, pepper, milk, thyme, onion powder and garlic powder with a whisk.
    2. In your slow cooker, add the tater tots in a single layer. Then place the sausage patties on top of the tots. Pour the egg mixture over the top. Then sprinkle the cheese and bacon pieces on top.
    3. Cover and cook on high for 90 minutes to 2 hours. Eggs should be set. 
    4. Serve and enjoy.

    I used my 6 quart Instant Pot Duo 60 7 in 1*.

      Perfect for Christmas Eve morning! I used the slow cook setting in the on my 8qt instant pot overnight. I thought I had tater tot’s, but I had less than 1/4 of a bag and a huge bag of French fries. I also had mild Italian sausage set out so I used that instead. I layered what tator tots I had and put about two inches of french fries on top. I tripled the eggs and seasoning and milk and it turned out perfect. I made country grave to top it with. Even though I didn’t make it as was written, I probably won’t ever change it in the future! My kids loved eating French fries for breakfast and it turned out sooooo good!

      35 minutes? Why so long? Sounds like something I would do in a toaster over for 20-30 minutes…not being critical, but what advantage is there to doing this in the instant pot? Different texture or taste? Thanks!

      Hi Karen,
      First time I used 5 eggs when making this casserole and everything was perfect!! The second and now the third time, I have used 6 eggs and have had to cook for an additional 10 minutes as the eggs are completely set. Any thoughts?

      Substituted ham for sausage, air fried potatoes and added sautéed onion and red pepper, and put a layer of asparagus on top of ham. (I tinker with the recipe every time I make it). This is just so good I make it at least once a week. Thanks for sharing.
      There are only two of us. Can the cooked casserole be frozen?

              Individual portions wrapped tightly in non-stick foil and stuck in a freezer bag works well for freezing the casserole. I reheat from frozen still wrapped in foil in an air fryer at 360° for about 20 minutes. Delicious.

        I bet you could although I haven’t tried it so I’m not sure how long. I would start at 350 degrees for 45 minutes and go from there.

        No, because it would burn to the bottom. But you could use the slow cooker function of the Instant Pot on “more” setting and it should work!

      Going to try making a double amount all at once in the Instant Pot using the stacking stainless pots (with lids) sold on amazon for use in the InstantPot. That way one container can have vegetables on top, the other container will be plain.

          It worked out GREAT and was was loved by everyone! Here are my notes:
          • With the stackable pans I was able to have 2 different versions to serve at once: 1 with onions, 1 without.
          • The top stackable container with the lid had a little bit of water (maybe 2T worth) after pressure cooking, which must have seeped in during the cooking process, but it did not affect the taste at all. The bottom container did not have any water seep in. Next time I might try putting a piece of foil on first, then the lid.
          • Instead of a trivet, I used the stackable pan attachment that clips the 2 stackable pots together, along with the 1 1/2 cups of water. This held the pots together tightly.
          • For the vegetarians out there, we used Morningstar Sausage Patties (frozen) and they worked out well.
          • I broiled the finished casseroles for 2 minutes before serving to turn the cheese golden brown. Totally not necessary though.
          • It did sound like an old fashioned percolator coffee pot the first few minutes pressure cooking, but that subsided during the cooking process.
          • I might try it with 4 eggs instead of 6 next time.
          • Instead of whisking, I blended my eggs with the milk and herbs, which made it more fluffy once cooked, that is the only reason why I think I might be able to only have to use 4 eggs vs 6.
          • The egg was completely cooked as well as the tator tots and the vegetarian sausage patties.
          This recipe is a KEEPER!!!

      Hi Karen I am making the Christmas morning Breakfast casserole and all I have is my springform pan the bottom comes off cause my other pan has came yet is it ok to use springform pan.

        I’ve had mixed results with springform pans because sometimes the liquid drips out. So if it is a tight seal it will probably work.

I have a question I have a 8quart Duo Nova I noticed you said pour 1 1/2 cups water in before you put pan of food in but since I have a 8quart do I need to put more than a 1 1/2 cup water?       Can I substitute small cubed red potatoes for frozen tots/hash browns and would the cooking temp change? Thanks Karen!

        You might need to par cook them before adding or else they will be too hard. That’s what I would do. I would cook for 1 minute in a steamer basket. Then follow recipe as written.
