Eula’s Casserole
This easy dump and go recipe has cabbage, orzo and chicken and cooks in only 1 minute. The cabbage can be swapped out with another vegetable like broccoli or green beans. But if you use cabbage you’ll love how it takes on all the delicious flavors of the dish like lemon and mustard.
This recipe is adapted from Laughing Spatula, the author states, “Eula was my mother-in-law. Probably one of the nicest people I have ever had the privilege of knowing…she had a true heart of gold. She was a wonderful cook, and I am not so sure she would be thrilled to know that her name is attached to one of the simplest dishes she made, but we started calling it Eula’s Casserole years ago and it’s too late to change now!”
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Cabbage–or green beans, broccoli, cauliflower
- Orzo–or rotini
- Chopped, cooked chicken–I used rotisserie chicken
- Lemon juice
- Cream of chicken and herbs soup–Campbells brand
- Black pepper–fresh cracked is best
- Sour cream–or plain yogurt
- Mustard–yellow or dijon
- Mayo
Steps
Pour broth into Instant Pot. Add in half of the cabbage. Sprinkle in the orzo.

Add in remaining cabbage. Dump in the chicken, lemon juice, cream of chicken soup and pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream, mustard and mayo.

Add in a pinch of kosher salt, if needed. Serve and enjoy!

Notes/Tips
- Serve with a side of roasted broccoli or green beans.
- Try swapping out the cabbage with broccoli florets or green beans.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Made this exactly as described in the recipe. Edible, but very bland. Kind of a soupy mess without any distinct flavor. It would benefit from garlic, onion, vegetables in addition to the cabbage, and some herbs and spices. Won’t be making this again.
This was very good and super easy! I shredded some chicken breasts, used canned green beans (instead of cabbage) and opted for Dijon mustard. I was skeptical setting the pot for only 1 minute, but it turned out great!
Yes! The one minute time is crazy but it works 🙂
