Description

An easy dump and go Instant Pot dinner with chicken, cabbage and orzo in a creamy sauce. 


Ingredients

Scale
  • 2 cups chicken broth
  • 3 cups shredded cabbage
  • 1 cup orzo pasta
  • 2-3 cups chopped, cooked chicken
  • 2 Tbsp lemon juice
  • 1 (10.5 oz) can cream of chicken and herbs soup
  • 1/4 tsp black pepper
  • 1 Tbsp sour cream
  • 1 Tbsp mustard
  • 1 Tbsp mayo

Instructions

  1. Pour broth into Instant Pot. Add in half of the cabbage. Sprinkle in the orzo. Add in remaining cabbage. Dump in the chicken, lemon juice, cream of chicken soup and pepper.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  3. Stir in the sour cream, mustard and mayo. 
  4. Add in a pinch of kosher salt, if needed. Serve and enjoy!
