Don’t Worry Casserole
Leave your worries behind and savor this creamy and cheesy potato dish. It’s like a big hug. Don’t worry—it’s loaded down with all the good stuff like bacon, cheese, and sour cream. It’s a fun take on mashed potatoes…the flavor is really amped up to a whole new level.
Your Instant Pot is a great asset in this recipe. You’ll use it to quickly steam your potatoes so you can mash them in no time. If you want to boil your potatoes on the stove you can easily do that too.
Ingredients/Substitution Ideas
- Russet potatoes–or red, yukon gold
- Butter
- Sour cream–or plain yogurt
- Buttermilk–or half and half
- Chives–or green onions, scallions
- Kosher salt
- Black pepper
- Yellow mustard-or spicy brown, dijon
- Bacon crumbles–or turkey bacon
- Sharp cheddar cheese–or monterey jack
Steps
Pour 1½ cups of water into Instant Pot. Add potatoes into a steamer basket* and drop the basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 8 minutes. When time is up move valve to venting and remove the lid.

Remove the steamer basket and set aside. Discard the water in the liner. Dump the potatoes into the empty liner.
Mash the potatoes. Stir in the butter, sour cream, buttermilk, chives, salt, pepper, mustard and bacon.

Spread the potatoes out evenly.

Sprinkle the cheese on top.

If you have an air fryer lid bake for 5 minutes at 350° F. If you don’t have an air fryer lid you can place the liner into the oven and bake at 350° F for 10 minutes.
Serve and enjoy!

Notes/Tips
- Serve as a side dish to any dinner. Some ideas are ham with steamed broccoli, turkey/chicken with a spinach salad.
- This recipe is gluten-free.
- This recipe can easily be doubled or tripled. Keep the same cooking time.
- This recipe can easily be made on your stove top and in the oven. Boil your potatoes until tender on the stove. Drain. Mash. Stir in the ingredients. Scrape into a 9×9 inch baking dish. Sprinkle with the cheese and bake at 350° F for 15 minutes.
- I used my Duo Crisp 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- I used my silicone steamer basket*.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

There are not enough slow cooker instructions. all are instant pots. I don’t have one, don’t intend to buy one. everything I put in for slow cooler recipes, and only find IP ones! Not happy.
