It’s Over Casserole
It’s January 8th. The holidays are over. My daughter went back to college. The tree got taken down. It’s over. I need some comfort food. This potato dish does the trick.
It’s just as easy as peeling and cutting the potatoes into cubes. Then you’re home free. Super fast and totally tasty. The seasonings are perfect. Serve up this potato dish as a side to any dinner you’d like.
Ingredients/Substitution Ideas
- Russet potatoes–or red potatoes
- Sour cream
- Garlic powder
- Kosher salt
- Black pepper
- Onion powder
- Smoked paprika
- Parmesan cheese
Steps
Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into a steamer basket* and drop the basket into the bottom of the Instant Pot.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting to release any remaining pressure.
Remove the basket of potatoes and set aside. Discard water and dry out the pot.
Add sour cream, garlic powder, salt, pepper, onion powder, paprika and parmesan into the Instant Pot. Stir.
Gently fold in the potatoes and coat with the sauce.
At this point you can serve and enjoy and or you can bake in the oven at 350 degrees for 20 minutes in a baking dish to get that baked casserole taste.
Notes/Tips
- Serve as a side dish to ham, turkey, chicken, pork chops, steak, etc.
- I like eating these potatoes hot but you could also serve it cold, almost like a potato salad.
- This recipe is gluten-free.
- I used my 6 quart Instant Pot* and my Avokado silicone steamer basket*.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Can the “It’s Over Casserole” be made on the crock pot? It seems like you should. Just change a couple of things and figure out the cooking time.q
Have you ever tried it in a crock pot?
There sound a lot like potatoes I make on the grill. I use Mrs Dash and butter as seasoning and cook them covered up in foil.

Yeah, I’m sure you could just put the potatoes in your crockpot. cover with water. Cook on high until they are fork tender. Drain off the water and then do the last step with the sour cream and spices. Should work great 🙂
