4th of July Casserole
Today’s recipe is a perfect side dish for your summer parties and potlucks. Make this in the slow cooker and bring it along with you to your holiday celebrations. This recipe is from Best of the Best from America Cookbook by Gwen McKeen and Barbara Moseley, “Made with bacon and ground beef, this is a tasty side dish for a barbecue, but could be served as a main dish any time of the year.”
Ingredients/Substitution Ideas
- Thick cut bacon
- Lean ground beef–or ground turkey, ground pork
- Onion–yellow or white
- Kosher salt
- Chili powder
- Yellow mustard
- Light red kidney beans
- Pinto beans–or navy beans
- Barbecue sauce–I used Sweet Baby Ray’s
Steps
Heat a pan over medium high heat. Add in the diced bacon and cook until crispy. Move the bacon to a paper towel lined plate. Discard the grease.

Add in the ground beef, onions, salt and chili powder and brown for 5 minutes. Transfer to the slow cooker.
Stir in the mustard, kidney beans, pinto beans and barbecue sauce.

Cover and cook on low for 2 hours. Stir in the bacon. Serve and enjoy!

Notes/Tips
- Serve as a side dish to your grilled meats, corn on the cob, watermelon and brownies for dessert.
- This recipe can be gluten free if you use gluten-free barbecue sauce.
- I used my 6 quart Ninja slow cooker. My slow cooker has a stovetop setting which was convenient for cooking the bacon and browning the ground beef. My particular model of slow cooker is no longer sold but it’s similar to this one*.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 10 slices thick cut bacon, diced

- 1 cup diced onion
- 1 tsp kosher salt
- 1 tsp chili powder
- 1/4 cup yellow mustard
- 1 (15 oz) can light red kidney beans, rinsed and drained
- 1 (15 oz) can pinto beans, rinsed and drained
- 1 cup barbecue sauce
Instructions

My slow cooker has a stove top setting so I did steps 1 and 2 in the slow cooker instead of on the stove.
