Day 331: Beef and Broccoli

1 lb roast, sliced into thin strips

1 cup beef broth
1/2 cup soy sauce
1/3 cup brown sugar
2 Tbsp sesame oil
3 garlic cloves, minced
2 Tbsp cornstarch
2 Tbsp water
Fresh broccoli florets (as many as desired)

Place beef in slow cooker. Mix the soy sauce, brown sugar, oil, and garlic together. Pour over beef. Cover and cook on HIGH for 3 hours or on LOW for 6 hours. Stir cornstarch and water in a cup until smooth. Add to slow cooker. Stir well to combine. Add blanched broccoli. Stir to combine. Cover and cook for 20 minutes longer on HIGH or until thickened. Serve over rice. Makes 4-6 servings.


Review:
Although this had really great flavor the roast that I used never really got that tender. I would make this recipe again but I would maybe use a different cut of meat. Maybe a chuck steak sliced thinly. I preferred the Asian chicken over this recipe. 3 stars
