Witches Cauldron Casserole–a perfect Halloween meal! Crockpot beef stew ladled over mashed potatoes.

Witches Cauldron Casserole
Cook up this witches brew in your cauldron (uh, I mean Crockpot) for Halloween. It’s the easiest recipe to get going in the morning. And then you have the rest of your day to prepare halloween stuff (costumes, parties, candy, etc). My kids don’t trick or treat anymore (SAD!) but when they did I always loved to serve up a hearty and warm dinner before they went out for the night. This is a fun recipe because the mashed potatoes are an orange color to match the Halloween theme. Plus the beef gets perfectly tender in the slow cooker. We scraped our cauldron clean…sadly there are no leftovers!
Ingredients/Substitution Ideas
- Beef stew meat–or chuck roast cut into cubes
- Baby carrots–or peeled carrots cut into chunks
- Celery
- Minced dried onion
- Kosher salt
- Sugar
- Water
- Campbell’s tomato soup–or homemade
- Minute tapioca*–or 1/4 cup flour
- Russet potatoes–or red, yukon gold
- Butter
- Milk
- Salt and pepper
Steps
Add beef, carrots, celery, onion, salt, pepper, water, tomato soup and tapioca into slow cooker.

Stir. (If using flour instead of tapioca then toss the meat in the flour and coat it well before adding it into the slow cooker).

Place the potatoes on top.

Cover slow cooker and cook on low for 5-7 hours, or until potatoes and beef are fork tender.

Use tongs to place potatoes into a mixing bowl. Mash the potatoes. Stir in the butter, milk and salt and pepper to taste.

Salt and pepper the beef mixture to taste.
Place a scoop of potatoes onto each serving plate and ladle a scoop of the beef mixture over the top. Enjoy!

Notes/Tips
- Serve with crusty bread, a dinner roll, homemade french bread or cornbread. Add some greens to the meal like spinach, collard greens, green beans or broccoli.
- I used my 3 quart Crockpot*. You can double this recipe in a 6 quart slow cooker.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
