Description

A perfect Halloween meal! Crockpot beef stew ladled over mashed potatoes. 


Ingredients

Scale
  • 1 pound beef stew meat
  • 2 cups baby carrots
  • 2 celery ribs, sliced or diced
  • 2 Tbsp minced dried onion
  • 1 tsp kosher salt
  • 1 tsp sugar
  • 2/3 cup water
  • 1 (10.5 oz) can Campbell's tomato soup
  • 2 Tbsp minute tapioca* (or 1/4 cup flour)
  • 1 1/2 to 1 3/4 pounds peeled Russet potatoes
  • 2 Tbsp butter
  • 1/4 cup milk
  • Salt and pepper, to taste

Instructions

  1. Add beef, carrots, celery, onion, salt, pepper, water, tomato soup and tapioca into slow cooker. Stir. (If using flour instead of tapioca then toss the meat in the flour and coat it well before adding it into the slow cooker).
  2. Place the potatoes on top.
  3. Cover slow cooker and cook on low for 5-7 hours, or until potatoes and beef are fork tender.
  4. Use tongs to place potatoes into a mixing bowl. Mash the potatoes. Stir in the butter, milk and salt and pepper to taste. 
  5. Salt and pepper the beef mixture to taste.
  6. Place a scoop of potatoes onto each serving plate and ladle a scoop of the beef mixture over the top. Enjoy!
