Lazy Jane’s Casserole–an easy Instant Pot or Crockpot recipe for tender bites of beef stew meat with mushrooms, carrots, onions and gravy.

Lazy Jane’s Casserole

Today’s recipe is a lazy easy recipe that you can make in the Instant Pot or Crockpot but it does not taste like it was easy to make! It’s so yummy! Greg was loving this and we had no leftovers! The flavor of the gravy is so good you’ll be slurping it down. We were staying at our cabin when I made this so I didn’t have a lot of ingredients on hand but it didn’t matter because it turned out so good even with just basic ingredients.

This recipe is adapted from Lazy Jane’s Weekend Casserole on A Peek Into the Pantry. The author states, “If you’re ever looking for something that tastes like a five star French dish but you’ve got limited cooking ability, time, or energy, this is the dish for you!”

Ingredients/Substitution Ideas

  • Canola oil–or vegetable oil
  • Onion
  • Kosher salt and pepper
  • Campbell’s beef consomme
  • Red wine vinegar
  • Beef stew meat–or a roast cut into 1 inch pieces
  • Mushrooms
  • Carrots–or baby carrots
  • Garlic powder
  • Dried parsley
  • Cornstarch

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onion and saute for 4 minutes. Add in a pinch of kosher salt and pepper.

Pour in the beef consomme and vinegar. Scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the meat, mushrooms, carrots, garlic powder, parsley and a pinch pinch of kosher salt and pepper. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 20 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. 

Turn Instant Pot to saute setting. Stir cornstarch together with 2 Tbsp of cold water until smooth. Stir the slurry into the pot to thicken the sauce. Turn off Instant Pot. Add salt and pepper to taste.

Serve the beef, gravy and vegetables plain, over noodles or potatoes. 

Notes/Tips

  • Serve over the top of mashed potatoes, mashed cauliflower, baked potatoes, egg noodles, rice etc.
  • This recipe can be low carb if you serve plain. You can also take out the carrots so there are less carbs.
  • This recipe dairy free.
  • This recipe can be gluten free if you use a gluten-free consomme.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

An easy Instant Pot or Crockpot recipe for tender bites of beef stew meat with mushrooms, carrots, onions and gravy.


Ingredients

Scale
  • 1 Tbsp canola oil
  • 1 onion, sliced
  • Kosher salt and pepper
  • 1 (10.5 oz) can Campbell’s beef consomme
  • 1 Tbsp red wine vinegar
  • 20 ounces beef stew meat
  • 8 ounces sliced mushrooms
  • 2 large carrots, peeled and cut into 1 inch chunks
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 2 Tbsp cornstarch

Instructions

Slow Cooker Instructions:

  1. Add onions, beef consomme, vinegar, mushrooms, carrots, garlic powder, parsley and a big pinch of kosher salt and pepper into the slow cooker. 
  2. Coat the beef in the cornstarch by shaking together in a container with a lid. Stir the meat into the slow cooker.
  3. Cover and cook on low for 6 hours. 
  4. Serve the beef, gravy and vegetables plain, over noodles or potatoes.

    This is so yummy and comforting on a chilly night! I only had white wine vinegar, and it gave a great flavor. I also peeled and cut up 2 large russet potatoes to cook with the mix. If I hadn’t added them, this would be perfect over mashed potatoes or noodles. So good and the meat was perfectly tender!

    Karen, couldn’t I add potatoes with the other veggies as you did in Country Beef Casserole?
