Farm Life Casserole

For a hearty breakfast or breakfast for dinner (which is my favorite) try this easy egg casserole in your slow cooker. You can quickly put everything together and then let the slow cooker do its thing. If you’d rather, you can also bake this in the oven.

The casserole starts with a base of hashbrown potatoes and then cheese, ham, and finally some eggs. We love serving a big spoonful of salsa or picante sauce on top of each portion. You might also opt for a bit of tabasco or ketchup.

Ingredients/Substitution Ideas

  • Frozen southern style hash brown potatoes–or regular hashbrowns
  • Monterey jack cheese–or pepper jack cheese, sharp cheddar
  • Ham–or cooked, drained sausage
  • Green onion
  • Eggs
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Heavy cream–or evaporated milk
  • Salsa–or ketchup

Steps

Spray a 6 quart slow cooker with non-stick cooking spray. Add potatoes into bottom of crock. Salt and pepper the potatoes lightly. 

Sprinkle the cheese, ham and onion evenly over the potatoes.

In a large glass measuring cup whisk the eggs together with the salt, pepper, garlic powder, onion powder and cream.

Pour the egg mixture evenly into the crock.

Cover slow cooker and cook on high for 2 hours, or until cooked through (all slow cookers cook differently so yours may take shorter or longer). 

Serve the breakfast casserole topped with salsa.

Notes/Tips

  • Serve with fresh fruit like berries, melon or sliced oranges. Serve alongside a slice of buttered toast.
  • I used a 6 quart oval slow cooker. This can also be made in a smaller slow cooker although cooking time may need to be adjusted a bit (increase by 30 minutes)
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. This is great for a quick and easy microwavable breakfast.
  • Another recipe you can make with southern style hashbrowns is Easter Potatoes.
  • Feel free to add in some diced bell peppers, sauteed mushrooms and onions or some bacon crumbles.
  • This recipe is gluten free.
  • To make this recipe low carb replace the hashbrowns with riced cauliflower.

Description

An easy slow cooker breakfast casserole with hashbrowns, ham, eggs and cheese. 


Ingredients

  • 2 ounces shredded monterey jack cheese
  • 8 ounces cubed ham
  • 1 green onion, diced
  • 6 eggs
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/3 cup heavy cream
  • Salsa, for topping

Instructions

  1. Spray a 6 quart slow cooker with non-stick cooking spray. Add potatoes into bottom of crock. Salt and pepper the potatoes lightly. 
  2. Sprinkle the cheese, ham and onion evenly over the potatoes.
  3. In a large glass measuring cup whisk the eggs together with the salt, pepper, garlic powder, onion powder and cream. Pour the egg mixture evenly into the crock.
  4. Cover slow cooker and cook on high for 2 hours or low for 4 hours, or until cooked through (all slow cookers cook differently so yours may take shorter or longer). 
  5. Serve the breakfast casserole topped with salsa. 

Notes

For oven: layer the ingredients in a greased 9×13 inch pan. Bake at 350 for 40 minutes.
