Welcome Back Casserole
After being away from home for a few days it’s always good to get back and cook again. This beef and cabbage dish was interesting, delicious, homey and easy to make. It’s a one pot meal in the Instant Pot that you’re going to love. My family all agreed that this was a winner. The ingredients seem a tad bit random but it all worked nicely together in the end! If you like beef and cabbage together you’ll love this dish. Try it out soon!
Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7
- Onion–yellow, white
- Beef broth–or chicken broth
- Cajun seasoning–the kind that has salt in it
- Black pepper
- Italian seasoning
- Worcestershire sauce
- Dijon mustard
- Frank’s hot sauce
- Cabbage–green
- Orzo–or long grain white rice (use a 5 minute pressure cook time if using rice)
- Tomato paste
- Tomato sauce
- Frozen sweet corn
- Sharp cheddar cheese
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions, cajun seasoning, pepper and Italian seasoning. Brown for 5 minutes.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the Worcestershire, Dijon, hot sauce, cabbage, orzo, tomato paste, tomato sauce and corn. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir. Sprinkle the cheese on top and let it melt.

Serve and enjoy!

Notes/Tips
- Serve with roasted green beans or spinach salad.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Other recipes you can make with cabbage are Cabbage, Potatoes and Sausage and Buttered Cabbage.
- I used the Smith’s brand Smidge and Spoon cajun seasoning. Use whatever you like.
- To make this gluten free use rice instead of orzo. Long grain white rice will need a 5 minute pressure cook time with a 10 minute natural pressure release.

I haven’t tried this yet. I will discuss it with my dietician. It may work if I reduce the tomato by half and the cheese by 75%.
I appreciate the nutrition data. I have kidney disease and I must restrict potassium, phosphates and salt.
Can you add the Potassium data to the nutriition data? This would be very helpful for kidney failure patients.
As we age everybodys kidney function deteriorates. Most kidneys don’t fail but would be healthier with less sodium. This information will help me plan my diet. I am on dialysis.
