Marry Me Beef
Today’s recipe is an easy beef and rice recipe that is surprisingly delicious. It looks pretty basic but thanks to the seasonings, the fresh basil, fire roasted tomatoes and parmesan it has lots of great flavor. Keep cooking like this and you may get a marriage proposal 😉
This recipe has been adapted from One-Pot Marry Me Beef on Laura’s Lean.
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Garlic cloves
- Italian seasoning
- Kosher salt
- Black pepper
- Crushed red pepper flakes
- Converted rice–or long grain white rice
- Beef broth–or chicken broth
- Fire roasted tomatoes
- Heavy cream
- Parmesan cheese
- Fresh basil
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Stir in the garlic, Italian seasoning, salt, pepper and red pepper.

Stir in the rice and cook for one minute.

Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. Dump in the tomatoes.

Cover Instant Pot and lock lid in place. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the cream, parmesan and basil. Add a pinch of kosher salt (or to taste).

Serve and enjoy!

Notes/Tips
- Serve with a green salad or green beans and some cornbread with honey butter.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.
- This recipe is gluten-free. This recipe can be dairy-free if you eliminate the cream and parmesan.

- 1 pound lean ground beef
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- 1/2 tsp kosher salt

- 1 1/2 cups beef broth
- 1 (14.5 oz) can fire roasted tomatoes
- 1/4 cup heavy cream
- 1/4 cup shredded parmesan cheese
- 2 Tbsp chopped fresh basil
- Salt to taste
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Stir in the garlic, Italian seasoning, salt, pepper and red pepper.
- Stir in the rice and cook for one minute.
