Description
A fun and flavorful cabbage and beef casserole with orzo and sweet corn made fast in the Instant Pot.

- 1 pound lean ground beef
- 1 cup diced onion
- 1 cup beef broth
- 1 tsp cajun seasoning
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1 Tbsp Worcestershire sauce
- 1 Tbsp Dijon mustard
- 1 Tbsp Frank's hot sauce
- 2 cups shredded cabbage
- 1/2 cup orzo
- 2 Tbsp tomato paste
- 1 (8 oz) can tomato sauce
- 1 cup frozen sweet corn
- 1 cup shredded sharp cheddar cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions, cajun seasoning, pepper and Italian seasoning. Brown for 5 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the Worcestershire, Dijon, hot sauce, cabbage, orzo, tomato paste, tomato sauce and corn. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir. Sprinkle the cheese on top and let it melt. Serve and enjoy!
