Description

A fun and flavorful cabbage and beef casserole with orzo and sweet corn made fast in the Instant Pot. 


Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 cup beef broth
  • 1 tsp cajun seasoning
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 1 Tbsp Frank's hot sauce
  • 2 cups shredded cabbage
  • 1/2 cup orzo
  • 2 Tbsp tomato paste
  • 1 (8 oz) can tomato sauce
  • 1 cup frozen sweet corn
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions, cajun seasoning, pepper and Italian seasoning. Brown for 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the Worcestershire, Dijon, hot sauce, cabbage, orzo, tomato paste, tomato sauce and corn. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir. Sprinkle the cheese on top and let it melt. Serve and enjoy!
