Description
Upgrade your plain cauliflower rice to something amazing! With orzo, garlic, white cheddar and broccoli this dish has lots of flavor. Make it FAST in your Instant Pot.

- 1 Tbsp butter
- 1/2 cup diced onion
- 2 garlic cloves, minced
- 1 cup chicken broth
- 3 ounces (1/2 cup) orzo
- 2 cups chopped cooked chicken
- 1 (10 oz) package frozen cauliflower rice
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp ground mustard
- 1/4 tsp cayenne pepper
- 6 ounces shredded sharp white cheddar cheese
- 1 (12 oz) package frozen broccoli
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and saute for 4 minutes. Add in the garlic and saute for 30 seconds.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the orzo, chicken, cauliflower rice, salt, pepper, mustard powder and cayenne.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the cheese. Cook the vegetables according to package directions and then stir into the pot.
