Undertaker’s Casserole–hashbrown casserole with andouille sausage, corn, green beans, cajun seasoning and nacho cheese.

Undertaker’s Casserole

When you’re in the mood for something filling and a bit spicy try out this hashbrown casserole. With andouille sausage, nacho cheese sauce, cajun seasoning and red pepper flakes it has a bit of a kick.

This casserole was adapted from The Undertaker’s Casserole.

Ingredients/Substitution Ideas

  • Olive oil
  • Onion
  • Andouille sausage–or smoked sausage
  • Frozen green beans–optional
  • Frozen sweet corn–optional
  • Hashbrowns
  • Pace’s nacho cheese sauce–or another brand of nacho cheese sauce or velveeta
  • Black pepper
  • Garlic powder
  • Red pepper flakes
  • Cajun seasoning
  • Kosher salt
  • Sour cream
  • Colby jack cheese–or cheddar

Steps

Heat oven to 350° F.

Heat a large pan over medium high heat. Add in the oil and swirl around. Add in the onion and sausage and saute for 5 minutes.

Stir in the green beans, corn and hashbrowns and heat through for 5 minutes.

Stir in the nacho cheese, pepper, garlic powder, red pepper, cajun seasoning, salt and sour cream. Transfer the mixture to a baking dish (I used a glass 8×11 dish). 

Bake for 40 minutes.

Add the cheese on top and bake for 10 more minutes.  

Serve and enjoy.

Notes/Tips

  • Serve as a main dish or a side dish.
  • You can use whatever type of hashbrowns you like best. There are the shredded potatoes, cubes, cubes with peppers, etc.
  • If you don’t like spice I suggest using kielbasa in the place of andouille, leave out the cajun seasoning and use garlic salt instead, don’t put in the red pepper flakes, and use velveeta instead of nacho cheese.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 1 Tbsp olive oil
  • 1/2 cup diced onion
  • 6 ounces andouille sausage, diced
  • 1 cup frozen green beans
  • 1 cup frozen sweet corn
  • 5 cups hashbrowns
  • 1 (10.5 oz) can Pace’s nacho cheese sauce
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

  • Pinch of kosher salt
  • 1/4 cup sour cream
  • 1 cup shredded colby jack cheese
