The Ultimate Casserole-the ultimate overnight breakfast casserole! It’s easy to make and with sausage, tater tots, eggs and cheese it’s tasty to eat. Make this in the oven or the slow cooker.

Ultimate Overnight Breakfast Casserole

I loved this casserole because it’s everything I love in a breakfast…eggs, sausage, potatoes, and cheese all in one pan! The prep is quick and easy (especially if you grab pre-cooked sausage), and you’ve got options: bake it right away, refrigerate overnight or cook in your slow cooker. I ate a large piece for breakfast and it kept me full until about 3 pm! It’s hearty and delicious.

Ingredients/Substitution Ideas

  • Tater tots–frozen, don’t thaw them. I like ore-ida brand.
  • Cooked sausage links–they can be frozen. You can buy them pre-cooked or raw and then cook them.
  • Cheddar monterey jack blend–or just cheddar is fine
  • Eggs
  • Milk–or half and half
  • Sour cream–or greek yogurt
  • Kosher salt
  • Black pepper
  • Onion powder
  • Garlic powder
  • Pace picante sauce–I used mild. You can also use salsa.

Steps

Spray a 9×9 inch pan with non-stick cooking spray. (I used a metal pan. If you use a glass pan you may need to increase the cooking time.)

Layer tater tots in bottom of pan. Add sausage evenly over the top of tots. Then sprinkle cheese evenly over the top.

In a bowl whisk together the eggs, milk, sour cream, salt, pepper, garlic powder, onion powder and picante sauce. Pour the mixture over the top.

Cover the pan with foil and refrigerate overnight.

Heat oven to 350° F. Bake for 25 minutes. Remove the foil and bake for 25 more minutes. Let sit for 5 minutes, slice and serve. 

Notes/Tips

  • Serve with fresh fruit or orange juice.
  • You can swap the sausage links for crumbled breakfast sausage, bacon, or even diced ham.
  • If you don’t have tater tots, hash browns work too.
  • This recipe can be gluten free. Just make sure the tots are gluten-free.
  • Don’t love picante sauce? Use salsa, tomato sauce, green chiles, or leave it out altogether.
  • Wondering if you have to make it ahead? Nope! You can bake it right away (the tots will stay firmer), or let it sit overnight in the fridge for an easy “pop-in-the-oven” breakfast.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 12 oz tater tots
  • 6 oz cooked sausage links, cut each into 4 pieces
  • 1 cup shredded cheddar monterey jack blend
  • 4 eggs
  • 1/3 cup milk
  • 1/4 cup sour cream
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/3 cup pace picante sauce

Instructions

Oven Instructions:

  1. Spray a 9×9 inch pan with non-stick cooking spray.

  4. Cover the pan with foil and refrigerate overnight.
  5. Heat oven to 350° F. Bake for 25 minutes. Remove the foil and bake for 25 more minutes. 
  6. Let sit for 5 minutes, slice and serve. 

Slow Cooker Instructions:

  1. Spray slow cooker with non-stick cooking spray. 
  2. Layer tater tots in bottom. Add sausage evenly over the top of tots. Then sprinkle cheese evenly over the top.
  3. In a bowl whisk together the eggs, milk, sour cream, salt, pepper, garlic powder, onion powder and picante sauce. Pour the mixture over the top.
  4. Cover slow cooker and refrigerate overnight.
  5. Cook on high for 2-3 hours. 
  6. Serve and enjoy!

Notes

You don’t have to refrigerate overnight. You can bake immediately but you’ll want to only bake for 20 minutes, remove foil and bake for 20 more minutes.

    Would this work doubled in a 13″x9″ dish? If so, would the baking time increase?

      Yes, doubling it works great in a 9×13! I do that all the time. The baking time will increase a bit, usually about 10–15 extra minutes after you remove the foil, depending on your oven. Just make sure the center is set and not jiggly before pulling it out.
