Description
A creamy, zesty chicken casserole loaded with sweet corn, cotija cheese, lime and chili powder. This is inspired by classic Mexican street corn!
Ingredients

- 1 cup plain Greek yogurt or sour cream
- 1/3 cup mayonnaise
- 1 1/2 tsp chili powder, divided
- 1 tsp garlic powder
- 1 tsp kosher salt
- 3 cups frozen sweet corn or fresh corn
- 4 cups shredded or chopped rotisserie chicken
- 1 cup (8 oz) crumbled cotija cheese, divided
- 3 Tbsp chopped cilantro
- 1 Tbsp fresh lime juice
Instructions
- Heat oven to 375° F. In a large bowl whisk together the Greek yogurt, mayo, 1 tsp of chili powder, garlic powder and salt.
- Fold in the corn, chicken and 2/3 cup cotija cheese. Coat well.
- Spread in a 9×13 inch baking dish. Sprinkle the remaining 1/3 cup of cotija cheese on top and ½ tsp of chili powder.
- Cover with foil and bake for 30 minutes. Remove foil and bake for 10 more minutes.
- Squeeze fresh lime juice over the top and sprinkle the cilantro on top.
- Serve and enjoy.
