Description

A creamy, zesty chicken casserole loaded with sweet corn, cotija cheese, lime and chili powder. This is inspired by classic Mexican street corn!


Ingredients

Scale
  • 1 cup plain Greek yogurt or sour cream
  • 1/3 cup mayonnaise
  • 1 1/2 tsp chili powder, divided
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 3 cups frozen sweet corn or fresh corn
  • 4 cups shredded or chopped rotisserie chicken
  • 1 cup (8 oz) crumbled cotija cheese, divided
  • 3 Tbsp chopped cilantro
  • 1 Tbsp fresh lime juice

Instructions

  1. Heat oven to 375° F. In a large bowl whisk together the Greek yogurt, mayo, 1 tsp of chili powder, garlic powder and salt. 
  2. Fold in the corn, chicken and 2/3 cup cotija cheese. Coat well. 
  3. Spread in a 9×13 inch baking dish. Sprinkle the remaining 1/3 cup of cotija cheese on top and ½ tsp of chili powder. 
  4. Cover with foil and bake for 30 minutes. Remove foil and bake for 10 more minutes.
  5. Squeeze fresh lime juice over the top and sprinkle the cilantro on top. 
  6. Serve and enjoy.
