Buckaroo Casserole–a hearty skillet bake with ground beef, smoky bacon, ranch style beans and barbecue sauce topped with a golden crescent roll crust.

Buckaroo Casserole
This easy beefy bean dish is good old fashioned camper type food. With 6 ingredients it comes together quickly. This dish is mostly made in on the stove top but you finish it off in the oven to bake the crescent roll dough top. It’s so satisfying to cut into with the crispy top and then give yourself a big scoop of the beans and beef. Enjoy! (Recipe adapted from Buckaroo Casserole).
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey, pork
- Onion
- Bacon crumbles
- Ranch style beans–or chili beans
- Barbecue sauce
- Pillsbury original crescent roll dough
Steps
Heat oven to 375° F. Heat an oven safe pan over medium high heat. Add in the ground beef and onion. Brown for about 7 minutes, until beef is cooked through and onions are soft.

Stir in the bacon, beans and barbecue sauce. Turn heat to low and let simmer for 4 minutes.

Open roll of dough and unroll the dough. Place it as evenly as possible on top of the beans. You’ll have to tear apart some of the pieces to make it fit in a round pan.
Bake for 11 minutes, until dough is cooked through and browned on top.

Serve and enjoy! Top with a bit of shredded cheddar, if desired.

Notes/Tips
- Serve with coleslaw or roasted vegetables.
- Ranch style beans are seasoned pinto beans simmered in a chili, tomato, and onion sauce, popular in Tex-Mex and Southern cooking. You can find them at most major grocery stores like Walmart, Kroger, or Safeway.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
