Description

Instant Pot one pot meal with potatoes, ground beef, taco seasonings and Rotel tomatoes. Don’t forget your favorite toppings!


Ingredients

Scale
  • 1 pound lean ground beef
  • 2 Tbsp dried minced onion
  • Kosher salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • Pinch of smoked paprika
  • 1 cup beef or chicken broth
  • 1 1/2 pounds red potatoes, cut into 3/4 inch cubes
  • 1 (10.5 oz) can Campbells cheddar cheese soup
  • 1 (10 oz) can Rotel (I used mild)
  • Toppings: diced avocado, tamed pickled jalapenos, diced tomatoes, sour cream, cilantro

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. Stir in a pinch of salt, pepper, cumin, chili powder and smoked paprika.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the potatoes. Top the potatoes with the soup and rotel. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Gently stir. Scoop onto plates and top with all your favorite toppings.
