Description
Instant Pot one pot meal with potatoes, ground beef, taco seasonings and Rotel tomatoes. Don’t forget your favorite toppings!
Ingredients

- 1 pound lean ground beef
- 2 Tbsp dried minced onion
- Kosher salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- Pinch of smoked paprika
- 1 cup beef or chicken broth
- 1 1/2 pounds red potatoes, cut into 3/4 inch cubes
- 1 (10.5 oz) can Campbells cheddar cheese soup
- 1 (10 oz) can Rotel (I used mild)
- Toppings: diced avocado, tamed pickled jalapenos, diced tomatoes, sour cream, cilantro
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. Stir in a pinch of salt, pepper, cumin, chili powder and smoked paprika.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the potatoes. Top the potatoes with the soup and rotel. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Gently stir. Scoop onto plates and top with all your favorite toppings.
