Instant Pot Haystack Supper

An Amish Haystack supper is something I loved to learn about. It’s basically a fundraiser dinner for those in need. You take your plate down a line and get served many layers of ingredients onto one plate. By the time you get to the end of the line your plate looks like a giant haystack.

For my Instant Pot version, I took the ingredients and cooked them together in a casserole type of dish in the Instant Pot. (Only a 3 minute pressure cook time!) My version includes layers of ground beef, onions, rice, tomato sauce, refried beans, taco seasoning, cheese, lettuce, olives, jalapenos, tomatoes, tortilla chips or Fritos, sour cream and guacamole. Mmmm mmmm! This reminded me of a casserole version of 7-layer dip.

  • I’ve found that each brand of taco seasoning has different potency levels. Season as you see fit.
  • I used long grain white rice. Try other types of rice by using the green chart below. Use the cooking time and broth to rice ratios listed.
  • You can use ground turkey in the place of ground beef.
  • This recipe can be gluten free! Just make sure to use gluten free broth, Old El Paso or Rosarita brand refried beans, McCormick’s taco seasoning and corn chips.
  • Try using pickled jalapenos for a topping! I love the tame jalapeno peppers that are in glass jars by the pickles. These are flavorful but not too spicy.
  • I used my 6 quart Instant Pot Duo 60 7 in 1*. You can also make this in an 8 quart pot. Halve the recipe in a 3 quart pot.

How to make Instant Pot Haystack Supper:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and onions. Break up the beef. Brown for about 5 minutes. If there is excess grease, drain it off (I used 90% lean and didn’t drain grease). Stir in 1 Tbsp of the taco seasoning (or amount you like). 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice (don’t stir in, just sprinkle in…this will help prevent burn message). 
  4. In a medium bowl stir together 1 can of tomato sauce, the can of refried beans and 1 Tbsp of taco seasoning. Spoon the mixture evenly over the top of the rice. Pour the second can of tomato sauce over the top and spread evenly. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Turn off Instant Pot. Remove the lid.
  6. Sprinkle the cheese on top. Then layer the lettuce, tomatoes, olives and jalapenos on top. 
  7. Scoop onto plates and serve with tortilla chips or Fritos. Spoon a dollop of sour cream and guacamole on each serving.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onions
  • 2 Tbsp taco seasoning (divided)
  • 1 1/2 cups beef broth
  • 1 cup long grain white rice
  • 2 (8 oz) cans tomato sauce
  • 1 (14 oz) can refried beans
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups shredded lettuce
  • 1 roma tomato, diced
  • 1 small can sliced olives
  • 1/2 cup pickled jalapenos (loosely packed)
  • Other: tortilla chips or Fritos, sour cream and guacamole

Instructions

    It was tasty, but will add some garlic powder and salt and pepper to the meat next time. I did not put the lettuce, tomatoes, etc. in the instant pot in case of leftovers, but I did melt the cheese on top as indicated. Salsa was another good topper.

    I feel stupid for asking this, but do you cook the rice first or does the rice cook while in the recipe?
