Shooked Potatoes

I’m all shook up! These potatoes that are shook in the pot with butter, salt, pepper and parsley get all coated in goodness and they are so delicious. What a perfect side dish to any dinner! You can easily double or triple this recipe to feed a crowd. We took these potatoes down in no time!

Ingredients/Substitution Ideas

  • Red potatoes–or yellow potatoes
  • Butter
  • Kosher salt
  • Black pepper
  • Dried parsley–or fresh parsley

Steps

Pour 1 ½ cups of water into the Instant Pot. Quarter the red potatoes and put them in a steamer basket. Drop the basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up move valve to venting and remove the lid. 

Move steamer basket out of the pot and discard the water. Turn Instant Pot to saute setting and add in the butter to melt it. Once it is melted turn off the pot. Add in the potatoes and sprinkle in the salt, pepper and parsley. 

Put a lid on the Instant Pot liner and shake well. Serve and enjoy!

Notes/Tips

  • Serve as a side dish to ham, chicken, steak, etc.
  • This recipe can easily be doubled or tripled. Use the same amount of water beneath the steamer basket.
  • I like potato skins so I kept them on but you can peel if you’d like.
  • You can also make this recipe on the stovetop: Quarter the red potatoes and place them in a pot. Add enough water to cover the potatoes and bring to a boil. Reduce heat and simmer for about 10-15 minutes, or until the potatoes are fork-tender. Drain the water and return the potatoes to the pot. Add the butter, salt, pepper, and parsley, then cover with a lid and shake well to coat. Serve and enjoy!
  • Try adding in more flavor with extra seasonings:
    • Garlic: Add 1–2 minced garlic cloves to the melted butter or sprinkle in ½ teaspoon of garlic powder.
    • Onion Powder: A dash (½ teaspoon) can add a subtle savory depth.
    • Smoked Paprika: A pinch will give a hint of smoky flavor.
    • Parmesan Cheese: Sprinkle freshly grated Parmesan over the potatoes before serving.
    • Lemon Zest: A little zest adds a fresh, bright flavor.
    • Red Pepper Flakes: If you like a little heat, a pinch of these will do the trick.
    • Fresh Herbs: Try fresh parsley, chives, thyme, or rosemary instead of dried parsley.
  • This recipe is gluten free.
  • I used my silicone steamer basket*. I also used this silicone Instant Pot liner lid*.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

    It was very tasty. I used only 2 T. of butter and less salt. Per your notes, I added onion and garlic powders. A very easy recipe.
