Kindness Soup–a delightful dump and go chicken soup with potatoes, cabbage, carrots and seasonings. Make it in the Instant Pot or Crockpot.

Instant Pot chicken potato soup

Kindness Soup

Chicken soup is good for the soul…we all know that. It warms you up and cheers you up. It’s the perfect thing to share with a friend or neighbor. This version of chicken soup swaps out the noodles and replaces them with potatoes and some cabbage instead (this makes the soup gluten-free). The flavor and seasonings are spot on. We sipped and slurped this soup and sadly there are no leftovers. Enjoy!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Boneless skinless chicken thighs or breasts–frozen or fresh
  • Dried onion flakes
  • Cabbage
  • Carrots
  • Red potatoes–these seem to hold their shape well. You can also try Russet potatoes.
  • Garlic powder
  • Dried parsley
  • Dried thyme leaves
  • Dried rosemary leaves
  • Dried sage
  • Kosher salt
  • Bay leaf
  • Butter

Steps

Turn Instant Pot to saute setting and add in the broth so that it can start warming up while you prepare all the other ingredients. Add in the chicken so it can start cooking.

Add in the onion, cabbage, carrots, potatoes, garlic powder, parsley, thyme, rosemary, sage, salt, bay leaf and butter. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move the valve to venting. Remove the lid. Discard the bay leaf. 

Use tongs to place the chicken on a cutting board. Shred or chop. Stir back into the soup.

Ladle into bowls and serve.

Notes/Tips

  • Serve with a dinner roll, French bread or whole wheat bread.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A delightful dump and go chicken soup with potatoes, cabbage, carrots and seasonings. Make it in the Instant Pot or Crockpot.


Ingredients

Scale
  • 4 cups chicken broth
  • 1 pound boneless skinless chicken thighs or breasts (frozen or fresh)
  • 1 Tbsp dried onion flakes
  • 2 cups shredded cabbage
  • 3 carrots, peeled and cut into 1/2 inch rounds
  • 1 pound red potatoes, peeled and cut into 1/2 inch cubes
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme leaves
  • 1/4 tsp dried rosemary leaves
  • 1/4 tsp dried sage
  • 3/4 tsp kosher salt
  • 1 bay leaf
  • 1 Tbsp butter

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting and add in the broth so that it can start warming up while you prepare all the other ingredients. Add in the chicken so it can start cooking.
  2. Add in the onion, cabbage, carrots, potatoes, garlic powder, parsley, thyme, rosemary, sage, salt, bay leaf and butter. 
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move the valve to venting. Remove the lid. Discard the bay leaf. 
  4. Use tongs to place the chicken on a cutting board. Shred or chop. Stir back into the soup.

Slow Cooker Instructions:

  1. Add all ingredients into the slow cooker.
  2. Cover slow cooker and cook on low for 4-6 hours or on high for 2-3 hours.
  3. Discard the bay leaf. 
  4. Use tongs to place the chicken on a cutting board. Shred or chop. Stir back into the soup.
  5. Ladle into bowls and serve. 

Notes

For the instant pot version it is very important that the very first thing you do is add the broth and chicken into the pot and turn on the saute setting. This will make sure that the chicken gets all the way cooked through. While you’re peeling and chopping the other ingredients the chicken and the broth will start heating up and cooking.

    I am going to freeze this soup, so I don’t want to add potatoes. Any suggestions for a substitution? If using rotisserie chicken, how much and when would I add it?

      Great questions, Rose! If you’re planning to freeze the soup, skipping the potatoes is a great idea they don’t freeze well. You can substitute with extra cabbage, carrots, celery, zucchini, or even a can of drained white beans (if you want something a little heartier). All of those freeze beautifully.

      If you’re using rotisserie chicken, use about 2–3 cups of chopped chicken. Add it after pressure cooking (or at the end of slow cooking), right when you would normally stir the shredded chicken back in. It only needs a few minutes to warm through.

      Well. my post disappeared where I gave five stars so I’ll do it again. (I posted the word “thyme” because I misspelled it in the disappearing post.) I’d commented that while I was puttering around the kitchen. making the soup, I was inspired to break out in song….”Are you going to Scarborough fair……parsley sage rosemary and THYME (not time)…ingredients in the soup…..anyone remember that? Anyway, this is a very tasty, light soup and everyone loved it!

    Just curious…I’m making this soup right now, and notice you say to use the “soup” button…and I am.. which I’ve never used, even though I’ve been using my IP for years. Would using the manual button (which I’ve always used) give the same results? I also noticed I was able to increase it to high pressure, and I never was before…..everything I make has been on low pressure! I feel like there’s a lot I don’t know about using this thing although thank heavens what I have made seems to be fine. 😳

      Oh that’s funny! The soup button is supposed to keep the broths clear because it’s not as aggressive as the pressure cook/manual cycle. But you can just cook low pressure and it should be fine.

      yes, just make sure to do as the recipe says and start heating up the broth and cooking the chicken while you prepare the rest of the ingredients.

    I used frozen skinless chicken thighs and substituted broccoli for cabbage which I added after it cooked. Super delicious!

    We have 3 feet of snow in our neighborhood today and this soup is exactly what we needed. Can rotisserie be used instead of the raw chicken? I have all the other ingredients necessary but would rather use the rotisserie chicken or my left over Thanksgiving turkey breast.

        Thank you for your reply. I went ahead and tried the leftover turkey breast from Thanksgiving. I had just enough and I shredded it before putting it in the pot. I heated the broth and then added the turkey first and then everything else in the order of the recipe. Just finished a bowl. It was worth more than 5 stars! It could have used more broth however. I made it in an 8qt instant pot so it would have accommodated that. I would surely make this again.
