Description
A simple Instant Pot recipe for tender red potatoes tossed in butter, salt, pepper, and parsley.

- 1 pound red potatoes (about 4 medium red potatoes)
- 3 Tbsp butter
- 1 1/4 tsp kosher salt
- 1/2 tsp black pepper
- 2 tsp dried parsley
Instructions
- Pour 1 ½ cups of water into the Instant Pot. Quarter the red potatoes and put them in a steamer basket. Drop the basket into the Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up move valve to venting and remove the lid.
- Move steamer basket out of the pot and discard the water. Turn Instant Pot to saute setting and add in the butter to melt it. Once it is melted turn off the pot. Add in the potatoes and sprinkle in the salt, pepper and parsley.
- Put a lid on the Instant Pot liner and shake well. Serve and enjoy!
