Flathead Lake Monster Potatoes–an easy recipe for a small batch of homemade cheesy hashbrown potatoes in the Instant Pot or the slow cooker.

Flathead Lake Monster Potatoes

Today’s dish is an easy recipe for cheesy hashbrowns. You can use your Instant Pot or Crockpot to make these potatoes. This recipe is adapted from Flathead Lake Monster Potatoes in the the Best of the Best from the Plains Cookbook Cookbook. The title caught my eye because I’m from Montana and have heard of the Flathead Lake monster 😉 not sure what these potatoes have to do with the monster but they were good! Skyler especially loved these potatoes. They make a small-ish batch which is nice when you want cheesy potatoes but don’t want to make a humongous pan.

Ingredients/Substitution Ideas

  • Butter
  • Onion–yellow, white
  • Flour–all purpose
  • Milk–or cream
  • Sour cream–full fat or low fat
  • Kosher salt
  • Poultry seasoning
  • Black pepper
  • Garlic powder
  • Frozen hashbrowns
  • Cheddar cheese–or colby
  • Crispy fried onions

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and saute for 4 minutes.

Sprinkle in the flour and whisk it in. Whisk in the milk until it thickens.

Stir in the sour cream, salt, poultry seasoning, pepper and garlic powder. Turn off Instant Pot.

Fold in the hashbrowns so they are coated with the sauce.

Sprinkle the cheese on top.

Cover Instant Pot and set it to the slow cooker setting on high for 90 minutes.

When time is up sprinkle the onions on top and serve.

Notes/Tips

  • Serve as a side dish to ham, steak, chicken, pork chops, etc.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • This recipes makes a small batch. If you’d like you can double the recipe to make 7-8 servings.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with crispy fried onions are cruncheroni casserole and Kathy’s country chicken casserole.

Description

An easy recipe for a small batch of homemade cheesy hashbrown potatoes in the Instant Pot or the slow cooker. 


Ingredients

  • 1 Tbsp butter
  • 1/4 cup diced onion
  • 1 Tbsp flour
  • 1/3 cup milk
  • 1/2 cup sour cream
  • 1 tsp kosher salt
  • 1/4 tsp poultry seasoning
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 12 ounces frozen hashbrowns
  • 1/3 cup shredded cheese
  • 1/3 cup crispy fried onions

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and saute for 4 minutes. 
  2. Sprinkle in the flour and whisk it in. Whisk in the milk until it thickens. 
  3. Stir in the sour cream, salt, poultry seasoning, pepper and garlic powder. Turn off Instant Pot. 
  4. Fold in the hashbrowns so they are coated with the sauce. 
  5. Sprinkle the cheese on top.
  6. Cover Instant Pot and set it to the slow cooker setting on high for 90 minutes. 
  7. When time is up sprinkle the onions on top and serve. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the butter and let it melt. Add in the onion and saute for 4 minutes. 
  2. Sprinkle in the flour and whisk it in. Whisk in the milk until it thickens. 
  3. Stir in the sour cream, salt, poultry seasoning, pepper and garlic powder. 
  4. Fold in the hashbrowns so they are coated with the sauce. Transfer to the slow cooker.
  5. Sprinkle the cheese on top.
  6. Cover and cook on low for 90 minutes.  
  7. When time is up sprinkle the onions on top and serve.

    The Crock Pot instructions start out heating in a pan – but does not ever progress to the Crock Pot ? ? ?

      It’s cooked on the slow cooker setting in the instant pot.
