Saint Nick’s Casserole–a breakfast casserole perfect for Christmas morning. With sausage, eggs and biscuits this is a great refueling breakfast after burning the midnight oil getting ready for Christmas morning.

Saint Nick’s Casserole

This breakfast casserole is ideal for Christmas morning because it is quick to assemble and hearty. It’s a meal Saint Nick would love after a long night of delivering presents! You can even prep parts of it ahead, like cooking the sausage the night before. Make it your own by customizing it…swap sausage for ham or bacon, add sautéed veggies, or use a different cheese to match your family’s taste. Double the recipe in a 9×13 inch pan to feed a crowd.

Ingredients/Substitution Ideas

  • Pillsbury Grands! Original Crescent Rolls–or 6 Grands biscuits
  • Ground breakfast sausage
  • Cheddar cheese–or monterey jack, colby jack
  • Eggs
  • Milk–or cream
  • Kosher salt
  • Black pepper

Steps

Preheat oven to 350° F. Grease a 9×9 inch baking dish.

Flatten and press the crescent roll dough into the bottom of the greased dish.

In a medium pan over medium high heat cook the breakfast sausage. Drain excess grease. Top the dough with the cooked sausage. Sprinkle the cheese on top.

In a bowl whisk together the eggs, milk, salt and pepper. Evenly pour over the top of the ingredients in the baking dish.

Bake for 30-40 minutes for a metal dark pan, 35-40 for a light metal pan or 40-50 minutes for a glass pan. Center should be puffed up and the eggs set.

Notes/Tips

  • Serve with some salsa or hot sauce.
  • Try adding in sliced green onions, chopped bell peppers, sauteed onions, chopped mushrooms or another vegetable of your choice.
  • Make it a meat lovers edition by adding in some bacon crumbles and ham cubes.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days, or freeze for up to 3 months.
