Rollover Casserole–wide old fashioned egg noodles with mushrooms and bites of pork in a creamy sour cream sauce made fast in the Instant Pot.

Rollover Casserole

You’ll be doing more than rolling over for this dinner; you’ll be doing flips! It’s like an easy and fast pork stroganoff that’s mm mmm good. I prepared this quickly before church and then set it to cook. When I got home a few hours later I stirred in the sour cream and it was soooo good. I was thinking that it might not be since it had sat on warm for quite some time but it really was great. Slurping up the wide egg noodles was so satisfying. Enjoy!

Ingredients/Substitution Ideas

  • Butter
  • Mushrooms
  • Chicken broth–or water and Better than Bouillon chicken base
  • Old fashioned wide egg noodles–I used Mrs. Miller’s brand found next to the other pastas
  • Pork loin chops–I got mine at Winco
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Paprika
  • Red pepper flakes
  • Sour cream–or plain yogurt

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the mushrooms and saute for about 4 minutes. Add in a pinch of kosher salt. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the noodles.

Add cubes of pork over the top of the noodles. Sprinkle the pork with salt, pepper, garlic powder, onion powder, paprika and red pepper flakes. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream. Serve and enjoy!

Notes/Tips

  • Serve with asparagus or green beans.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with sour cream are sour cream enchiladas or sour cream pork chops.
  • I found the special homemade egg noodles next to the regular pastas. They look more homemade and they taste really great in this recipe! If you can’t find these egg noodles you can use regular egg noodles but only pressure cook for 1 minute instead of 3 minutes.
  • Slice your chops across the grain in 3/4 inch strips then cut across the other way to cut into cubes. By slicing across the grain you’ll achieve more tender bites of pork.

Description

Wide old fashioned egg noodles with mushrooms and bites of pork in a creamy sour cream sauce made fast in the Instant Pot.


Ingredients

Scale
  • 2 Tbsp butter
  • 8 ounces sliced mushrooms
  • 2 1/2 cups chicken broth
  • 8 ounces old fashioned wide egg noodles (see picture above)
  • 1 1/4 pounds pork loin chops, cut into 1 inch cubes
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Pinch of red pepper flakes
  • 1 cup sour cream

    Could make this simple and just say we’ve had this twice….That should tell you something. But there is some back story. I don’t purchase pork often, and I think on my first go round with this dish I used maybe the wrong cut. The pasta and mushrooms were superb, but the pork, maybe lesser than. Yesterday I decided to swap out the pork for chicken thigh meat cut into rustic chunks. I am now officially a pushover for rollover casserole. This was fantastic enough to be added to a list I keep of classic dishes that we love and also serve to company. Thanks Karen, so much for this one. I think I say that a lot 🙂

    This was very good! I made it as written with my 3 qt. IP Mini, but browned the meat first in a cast iron skillet. One extra pan to clean was well worth the extra flavor. My wife called it ‘comfort food’, and I can’t think of a better compliment.

    If we didn’t want to use pork, what type beef would you use for this recipe??

      hmmm, beef stew meat takes 20 minutes to pressure cook so you could use that but you’ld have to precook it until tender. you could also do some sort of steak.

    I love all of the instant pot recipes. Every single one I have made has been delicious, including this one. Anyone who does not have an instant pot needs to get one and try these recipes instead of complaining/telling someone else how to run their website.

      Thank you, David. My sentiments EXACTLY! I get so very tired of the negative comments also. I’ve been using Karen’s IP recipes for over 4 years now, they are so EZ and delicious. I don’t understand why people even come to this website if they don’t have an Instant Pot. She has a filter so you can find crockpot recipes. If they want other recipes they can just use their browser’s search engine and find what they need. There’s no need to hassle Karen. She works very hard to come up with these recipes and I, for one, am so grateful to her.

      I agree with all who wrote in about the complainers. I know the site has crockpot in its name but if you don’t like a recipe, just ignore it. Karen has the best recipes of any blog I’ve ever followed and always responds to questions or comments. Ignore the whiners, Karen, and keep on giving us delicious recipes and tips!

    I agree with the other comments. I do not have an instapot, but there have been many recipes posted here that I would very much like to try.. Even when I specifically select “slow cooker, ” I am still given mostly insta recipes. All her dishes look so tasty. We are missing out. Maybe a sponsor could promote a contest or drawing to give away a few instapots 😉

    Don’t own instapot, just pots and pans and crockpot! can’t you post recipes that go in crackpots or a big pot on the stove???

      Yes I’m sure you could.
      Cook the egg noodles separately as per instructions on the package.
      Cook the pork cubes and mushrooms in the butter. Add in all the seasonings. Stir in the sour cream and the cooked noodles.
      You won’t need the broth for this version.
