Instant Pot Sour Cream Pork Chops

This is such an easy recipe that doesn’t require sauteing or browning. The sauce is so creamy and delicious that I couldn’t stop eating it! I served these pork chops and sauce with baked potatoes and broccoli. If you are trying to eat low carb a good option would be to serve these pork chops with cauliflower rice.

I picked up “rib eye chops” at the grocery store that were fairly thin. They were about a ½ inch thick. Remember that with pressure cooking you’re going to choose your cooking time of meats based on the thickness. Because my chops were thin I only used a 3 minute cooking time. Also they were lean so that required a shorter cooking time as well.

If you can’t find rib eye chops then you can use pork loin chops instead. You can also use blade chops. If you use blade chops then you’ll probably want to increase the cooking time to 6-8 minutes. They have more fat and collagen so they take longer to break down. Remember to always use a natural pressure release for pork chops.

What Pressure Cooker Did You Use?

To make Instant Pot Sour Cream Pork Chops I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly.  It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Description

Tasty pork chops with hardly any ingredients. The creamy sauce tastes amazing! This recipe is low carb and gluten free. 


Ingredients

Scale
  • 1 1/2 – 2 pounds of boneless pork chops (between 1/2 inch thick to 3/4 inch thick)
  • Salt and Pepper
  • 1 tsp onion powder
  • 1 Tbsp Worcestershire sauce
  • 1 cup chicken or beef broth
  • 2 Tbsp cornstarch + 3 Tbsp water
  • 1/2 cup sour cream
  • 2 tsp dried parsley

 


Instructions

  1. Salt and pepper the pork chops and sprinkle them evenly with onion powder. Pour the worcestershire sauce over the pork chops evenly and rub it into the chops. 
  2. Add the broth into the Instant Pot. Place the pork chops into the Instant Pot as evenly as possible. 
  3. Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
  4. Move the pork chops to a platter.
  5. Turn the Instant Pot to the saute setting. In a small bowl stir the cornstarch and water together until smooth. Stir the mixture into the Instant Pot. 
  6. In a small bowl stir about ¼ cup of the liquid mixture in the Instant Pot into the sour cream to temper it so that it doesn’t curdle. Add the sour cream into the pot. Stir until smooth. Stir in the parsley. Salt and pepper the sauce to taste. Once the sauce is thickened, turn off the Instant Pot.
  7. Serve the sauce over the top of the pork chops. 

Notes

This can be a low carb recipe. Just leave out the cornstarch slurry. 

To make gluten free just make sure your Worcestershire sauce is gluten free.

    Another amazing dish from your cookbook My chops were frozen and I cooked long grain rice in the fat daddio pan at the same time for 5 minutes with a 10 minute NR then a QR. after the yummy gravy thickened I added frozen veggies to it for a complete meal. Thank you. All enjoyed ❤️

    And yet another fabulous recipe from Karen! This was an easy, no fuss recipe. I also sliced potatoes and put them in the Fat Daddio’s cake pan and had them cook at the same time. My chops were thicker so I added 2 minutes to the cook time, which worked out great for the potatoes too.

    Great, this was my first recipe made in an Instant Pot, and I was wary because I didn’t know what I was doing. It still turned out great, similar taste to stroganoff. 🙂 My family liked it. I made it with green beans. Having the leftovers today!

    Hi, when you say that the pork chops need to be put in evenly as possible, can they be put on top of each other? I have a big family and it would be difficult to do this over and over again.

    I have made this twice and was disappointed…..I thought the pork chop would be more tender, more like the “cut it with a fork “ I get with pork or beef roast. My chops were about 3/4 inch thick. I
    First time I cooked 4 minutes and this time I did 5 minutes and then since not tender as I wanted, did another 3 minutes. Do I have unrealistic expectation for meat?

      Hi Deb, I think you need to cook less time, not more. Pork chops cook so quick. Especially if they are boneless.

    Such a great recipe. New to the Instant Pot 6 qt. My husband asked me to ask you a question about the liquid. In the instructions for our Instant Pot it says to use 1.5 cups of liquid. He was afraid that when we cooked the pork chops with only one cup of broth, that it was not enough. Can you explain how it works to use less than 1.5 cups of liquid for a recipe please? I am still learning! Thank you so much. Love your recipes and am enjoying using my new device!

      Hi Beth, even though the manual says 1.5 cups it still comes to pressure with 1 cup, especially if you have ingredients that let off liquid like chicken or mushrooms.

    This looks amazing but due to health issues I can’t have pork😭👎👎 what kind cooking time changes would you make for beef or wild steaks 1/2” – 1” thick?

      Hi Darcey, I haven’t ever made wild steaks in the Instant Pot. But from what I gather it would be a similar cooking time as stated in the recipe. Give it a shot and let me know how it goes!

      I bet it could! I would cook longer since they are frozen and thicker. I would try a 8-10 minute pressure cook time. Test doneness with a thermometer. Good luck! Let me know how they turn out!

      I would try 4 minutes. Just test for doneness with a thermometer. The inside of the chop should be 145 degrees.

    Do you happen to know another way of deodorizing the ring in the Instant pot? I recently made a macaroni dish and the ring has smelled so bad since. I ran it thru the dishwasher, hung it on a cupboard handle for two days, and put it out in the wind and sun for another day. No luck. fIts BAD.

      Peggy, I had a bit of luck with making a thick paste of baking soda and water and smearing it on the ring and letting it set overnight. But honestly, the silicone does pick up odors over time. A lot of folks (including me) buy extra rings online that are different colors, and then keep one for smelly dishes, one for yogurt and one sweets and desserts. The rings I got were in this set: https://www.amazon.com/gp/product/B07CRPSYHL/ref=ppx_yo_dt_b_asin_title_o02_s00?ie=UTF8&psc=1
      I just started making yogurt in the IP, and I didn’t want it to pick up any odors because it sits in there for at least eight hours, so now I have a dedicated ring just for that! I hope this is helpful to you!

        When I make yogurt I place double layer of paper towel on top then I use a dish to cover paper towels. I have never used insta pot lid.
