Description

Wide old fashioned egg noodles with mushrooms and bites of pork in a creamy sour cream sauce made fast in the Instant Pot.


Ingredients

Scale
  • 2 Tbsp butter
  • 8 ounces sliced mushrooms
  • 2 1/2 cups chicken broth
  • 8 ounces old fashioned wide egg noodles (see picture above)
  • 1 1/4 pounds pork loin chops, cut into 1 inch cubes
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Pinch of red pepper flakes
  • 1 cup sour cream

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the mushrooms and saute for about 4 minutes. Add in a pinch of kosher salt. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the noodles. Add cubes of pork over the top of the noodles. Sprinkle the pork with salt, pepper, garlic powder, onion powder, paprika and red pepper flakes. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the sour cream. 
  6. Serve and enjoy!
