Ranch Potatoes & Smoked Sausage–an easy sheet pan dinner with smoky sausage, tender potatoes and carrots tossed with ranch seasoning, then topped with Parmesan cheese.

Ranch Potatoes & Smoked Sausage

One pan dinners are such a win! You toss veggies and meat in some oil and seasonings and bake in the oven and voila there’s your whole dinner. I especially like these for the lunch leftovers. This one uses red potatoes and carrots tossed in dry ranch dressing mix along with sliced beef smoked sausage (which already has so much flavor in it). I ate this one happily and will have the leftovers for lunch today! Yay!

Ingredients/Substitution Ideas

  • Red potatoes–or Yukon gold potatoes
  • Carrots–or baby carrots
  • Beef smoked sausage–or kielbasa, turkey smoked sausage or chicken sausage
  • Olive oil–or avocado oil
  • Dry ranch dressing mix–I use Hidden Valley brand
  • Parmesan cheese–optional

Steps

Heat oven to 425° F. Add potatoes, carrots, sausage, oil and ranch mix into a mixing bowl. Stir well to coat.

Spread out sausage and veggies on a baking sheet.

Roast in the oven for 30 minutes, stirring half way through.

Serve and enjoy topped with a little shredded parmesan cheese.

Notes/Tips

  • Keep the potatoes and carrots around half-inch so they finish cooking at about the same time.
  • I cut this recipe in half. You can easily make this recipe smaller or larger for your needs.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.

Ingredients

  • 18 oz red potatoes, cut into 1/2 inch cubes
  • 5–6 medium carrots (14 oz), peeled and cut into half inch pieces
  • 12 oz beef smoked sausage, sliced into quarter inch rounds
  • 3 Tbsp olive oil
  • 4 Tbsp dry ranch dressing mix
  • Parmesan cheese, for topping

Instructions
