Happy Place Casserole
Greg and I have been spending time at our cabin in Island Park, our “happy place”! This casserole added to our happiness while we were there. It’s a perfect cabin food since it only requires 7 ingredients and not a lot of spices. It’s got really yummy flavor from the ranch dressing mix and, of course, the bacon crumbles.

Ingredients/Substitution Ideas
- Chicken tenderloins–or chicken thighs, cut into cubes
- Yukon gold potatoes–or peeled russet potatoes, red potatoes
- Hidden Valley dry ranch dressing mix–I usually buy a big container at Costco
- Sour cream
- Cheddar cheese–I like using sharp cheddar
- Bacon crumbles–or a few slices of bacon fried and crumbled
- Chives–I used freeze dried chives. You can also use some chopped green onion.
Steps
Pour 1 ½ cups of water into bottom of Instant Pot. Add the chicken and potatoes into a steamer basket. Place the steamer basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Set steamer basket aside. Discard the water in the Instant Pot. Pour the potatoes and chicken from the steamer basket into the Instant Pot liner.
Stir in the dressing mix, sour cream, cheese, bacon and chives to coat the chicken and potatoes.

Serve and enjoy!

- Serve with roasted broccoli or steamed asparagus.
- This recipe is gluten free.
- I used my silicone steamer basket*.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

how to cook in. crock pot??
Can I use cubed chicken breasts? If so, would time need to be adjusted.
I made the recipe before with chicken thighs and it was great.
Yes you can…however, they won’t be as moist and tender. Use same cooking time.
How can you go wrong when a recipe has sour cream, bacon and cheese? This is an easy, comfort food recipe. The only reason I gave it only 4stars is I wanted a little more “sauce.” Adding broccoli, as one reviewer suggested, would be great, too.

FYI step 1 says add the thicken and potatoes to the pot. I believe it should read chicken and potatoes.

How would I cook this in a slow cooker?
Could I add broccoli florets to this? If so, how would I do it?
I think broccoli would taste good with this one! I wouldn’t pressure cook the broccoli since it will be way too overdone with the 4 minute pressure cooking time. I would cook the broccoli separately on the stove or microwave and then stir it in after the pressure cooking time is up.
