Description

A one-skillet bake made with sausage, eggs, corn, green chiles and a cheddar topping.


Ingredients

Scale
  • 1/2 pound Jimmy Dean sausage
  • 2 eggs
  • 1 1/2 cups frozen sweet corn (or a drained can of corn)
  • 1 (8 oz) can tomato sauce
  • 1 (4 oz) can diced green chiles (or 1/2 of a green bell pepper, diced)
  • 2 oz cream cheese
  • 1/2 cup panko or regular breadcrumbs (or cooked rice)
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Heat oven to 375° F.
  2. Heat an oven safe skillet over medium high heat. Add in the sausage and break it up. Brown for about 5 minutes. Drain off excess grease. 
  3. Stir in the eggs and break them up. Cook the eggs like you would scrambled eggs. Turn the heat to low.
  4. Stir in the corn, tomato sauce, green chiles and cream cheese. Warm through enough to melt the cream cheese and warm the corn through. Turn off the heat.
  5. Stir in the panko. Sprinkle the cheese on top.
  6. Bake for 25 minutes. Serve and enjoy!
