Humble Casserole–sliced potatoes and smoked sausage in a creamy parmesan sauce made with the help of your Instant Pot.

Humble Casserole

Humble Casserole

This is a delicious potato casserole with parmesan, shallot, sour cream and beef smoked sausage. The potatoes get quickly steamed in your Instant Pot and then combined with the creamy sauce. It can be served as a main dish or a side dish. And you can swap out the smoked sausage with cubes of ham. I’ve adapted this recipe from the Food Network. Enjoy!

Ingredients/Substitution Ideas

  • Russet potatoes–or red, yukon gold
  • Butter
  • Beef smoked sausage–or cubes of ham
  • Shallot–or ¼ cup minced onion
  • Sour cream
  • Kosher salt
  • Black pepper
  • Dried thyme
  • Milk
  • Cornstarch
  • Parmesan cheese

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Place sliced potatoes into a steamer basket and drop the basket into the Instant Pot. Cover pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. 

While Instant Pot is doing its thing heat a pan over medium high heat. Add in the butter and let it melt. Add in the smoked sausage and brown for a few minutes. Then add in the shallot and saute for 4 minutes. 

Turn heat to low. Stir in the sour cream, salt, pepper, thyme. Pour in the milk. 

In a small bowl stir together the cornstarch with 2 Tbsp of cold water until smooth. Stir the slurry into the pan to thicken the sauce. Stir in the parmesan cheese. Turn off the heat. 

Once Instant Pot has finished cooking the potatoes move the valve to venting and remove the lid. Discard the water. Pour the potatoes into the empty pot. Fold in the sauce so that the potatoes are coated. 

Serve and enjoy!

Notes/Tips

  • Serve as a side dish to any meal. You can also serve this as the main dish!
  • I used my 6 quart Instant Pot*. I like using the avokado silicone steamer basket*.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Try using ham cubes in the place of smoked sausage.

Description

Sliced potatoes and smoked sausage in a creamy parmesan sauce made with the help of your Instant Pot. 


Ingredients

  • 8 medium Russet potatoes, peeled and thinly sliced
  • 1 Tbsp butter
  • 1 (12 oz) package beef smoked sausage, thinly sliced
  • 1 shallot, diced

  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 cup milk
  • 2 Tbsp cornstarch
  • 1 cup shredded parmesan cheese

  5. Once Instant Pot has finished cooking the potatoes move the valve to venting and remove the lid. Discard the water. Pour the potatoes into the empty pot. Fold in the sauce so that the potatoes are coated. 
  6. Serve and enjoy!

    I have the small potatoes, can I use them?

      Sure. Are you going to slice them or keep them whole? You may need to increase cooking time to 3 minutes if you want to keep them whole.

    Followed recipe except I added a couple cloves of garlic. Felt like the right thing to do. super yummy!
